Meet Austin Patry of Rollin’ n Bowlin’ Fresh Foods in Fort Worth

Today we’d like to introduce you to Austin Patry.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
In Fall of 2016, I met my business partner, Sophia Karbowski, in an Entrepreneurial Management class at Texas Christian University. Ironically, we were paired up on a group project that involved health, wellness, and food. Over time, we realized that Fort Worth, TX was lacking healthy food options (specifically healthy options within walking distance from TCU- A very health-focused campus). After visits to California and many açaí bowls later, we seized the opportunity to introduce Fort Worth to its first açaí bowl-focused establishment. With each craving of açaí came more motivation, and within months, what started as an idea soon became a proof-of-concept food truck.

And ever since day one, we’ve bootstrapped our company. We initially funded the purchase of our food truck with my profits from cashing out a long-term bitcoin investment.

After one successful year in the food truck, we reached their goal of rollin’ our way to their first brick and mortar on Texas Christian University’s campus. Since then, RnB has evolved to be an incubator for young food entrepreneurs with a mission to spread healthy vibes all around the world (with a focus on universities and corporate campuses). Currently, we have locations at TCU in Fort Worth, Tulane in New Orleans, Loyola Chicago, and soon to be University of Chicago.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Labor is always a struggle, as one of our core values is that we have hired a lot of students to our team. Working around student’s schedules is always difficult.

Speed of service and operations have been a focus for us. Since we proudly make everything made to order, it can be difficult to keep up with the demanding pace of a fast casual restaurant, especially when there are a lot of custom orders.

Starting in a food truck when I didn’t know the first thing about trailers, trucks, or cars.

Rollin’ n Bowlin’ Fresh Foods – what should we know? What do you do best? What sets you apart from the competition?
We are a health food café that is rapidly expanding through Universities and Corporate Campuses. We focus on açaí bowl, smoothies, and toasts.

Are you happy? Are you loving? Are you being creative? Are you being challenged? Do you feel uncomfortable? Are you growing? When I feel all of these things, I feel successful.
