Meet Dena Shaskan of Mockingbird Food Company

Today we’d like to introduce you to Dena Shaskan.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
I was the executive chef at The Modern Art Museum of Fort Worth for almost 12 years, then left to purchase Bravo!! Catering Company in 2015. Since then we have expanded the company to include several facets outside of purely catering, so we recently changed the name to encompass all of these services. (More on this later)

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It’s been a blast! I’ve definitely had some learning experiences! I’ve found that with a lot of creativity and a great staff anything can be accomplished. By the way, would you like to buy a catering company? 😉

Mockingbird Food Company – what should we know? What do you guys do best? What sets you apart from the competition?
Mockingbird Food Company is a boutique catering and event planning company. We specialize in gala events, weddings, cocktail parties and private dinners. Our cuisine is unmatched in quality and our attention to detail is what makes a catered party an event to remember. All menus are customized to each individual client’s needs to provide a truly unique event every time.

We also provide commissary services to local restaurants, produce food for online purchase through Neiman Marcus department store. Under our umbrella is also Cottonmouth Cotton Candy and Icon Bread. With Cottonmouth, we spin organic, dye-free cotton candy in gourmet flavors for weddings and large events. With Icon Bread, we bake artisan sourdough bread for sale at local farmers markets along with frozen soups, entrees and a variety of artisanally crafted food items such as drinking vinegar (shrubs), sauerkraut, salt and spice mixes, fermented hot sauce, etc.

What moment in your career do you look back most fondly on?
Though I’ve had many proud moments over the years, I would have to say that my proudest moment was attending and graduating the CIA in New York. It was a long-time dream that I was finally able to accomplish in adulthood. It was a fantastic learning experience with tons of great memories.
