

Today we’d like to introduce you to Julien Eelsen.
Julien, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I was born and raised in Paris, France. As every French kid I grew up eating, and soon enough cooking, crepes. I would prepare crepe batter with my Aunt and Grandmother on weekends. We would then cook a stack of crepes and had to wait until all the crepes were cooked. The wait was literally unbearable. I was just a kid.
A couple of decades later I moved to Dallas for work and after moving back to Paris, I wanted to change career, open my own business and come back to Dallas.
I settled on crepes because I has been such an important part of my life: cooking with my Aunt and Grandmother every weekend, eating crepes on the benches in Paris while in High School.
Has it been a smooth road?
Opening your own business, while liberating and exhilarating can be sometimes complex.
The biggest challenges for me was to adapt to the American way of doing business: more direct, more competitive than in France. There are so many moving pieces that organization is very important.
Overall, I have been blessed to be surrounded by great professionals since the beginning of this adventure.
So, as you know, we’re impressed with Whisk Crepes Cafe – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
Whisk Crepes Cafe is a small restaurant specialized in French Crepes, both sweet and savory. We also offer French wine and cider as well as espresso drinks.
We are especially known for our buckwheat crepes, also called Gallettes in France. Buckwheat is very traditional for savory crepes. It is very nutritious and also gluten free.
I am proud that I have been able to bring to Dallas a very traditional approach to French crepes with also including some local ingredients such as brisket or cinnamon apples that are sourced locally.
Let’s touch on your thoughts about our city – what do you like the most and least?
I fell in love with Dallas almost instantly. What sets apart Dallas is the quality of its people, their kindness and open-mindedness.
I think Dallas is yet to become a world class city. We need a better public transportation system and more walkability. But I do think new developments like Bishop Arts, Sylvan Thirty or Legacy West help steer the city towards that goal.
