Hi Tuan, thanks for joining us today. We’d love for you to start by introducing yourself.
I was never in the restaurant business to start. My friends pushed me to open a restaurant because I cooked well. the first restaurant just kind of fell into my lap. our landlord really needed help filling a space he had, and I decided to take a look. it was a small, long dark unit on 7701 stacy road. It reminded me of an alley. Thus, the name the alley noodle bar. in Asia, all the great food place are in alleys and so we decided to go forward with our restaurant concept. we wanted to bring our customers great flavors of Vietnam with healthy ingredients and good the customer service. This concept has proven very well so we are now ready for the second location in Little Elm and Frisco. We have a simple but flavorful menu.
We all face challenges, but looking back, would you describe it as a relatively smooth road?
Not being trained at a restaurant owner and chef, everything had to be learned quickly. We overcame that pretty well. We keep everything consistent by measuring everything out to the gram and ounces. The hardest part of the restaurant business is hiring people. especially after covid. But after many many struggles, we have such a wonderful team and can’t wait to expand and let them grow.

This Company was found by Tuan Tran and Kelly Ly. We wanted to bring people good food, healthy food, and great service. We are starting off with the noodle Bar concept in Mckinney because we saw a need for it in the area. We use traditional techniques and modern concepts to bring our vision to the north Dallas area. Pho is just the start. We are working on more concept with talented young chef in the area.
Any big plans?
We would like to develop more noodle bar restaurant in the area then introduce more concepts to the area. Our goal is to get 5 more in the next few years.
