
Today we’d like to introduce you to Adam Borja.
Hi Adam, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today.
My name is Adam. I am Chef and Owner of Comida El Cabezon.
I’m originally from California but have been calling Texas home for about 4 years now. I’ve had a passion for cooking (and eating) for as long as I can remember. My mother and father were equally active in the kitchen growing up, and I would lend a hand. I became fully hands-on in the kitchen my junior year in high school. I picked up an after-school job at Panda Express, and the rest was history.
Immediately after graduating, I started Culinary School at Kitchen Academy in Hollywood. When I finished, I worked in various kitchens and quickly realized how intense it could be. After 3 years of working in hotels, restaurants, and cafes I decided it was time to try something else. I started to work for a telecommunications company that trained me in business and sales. I then decided to mix the experience and skills that I had obtained to start Comida El Cabezon. My friends have always called me Cabezon for my big head, supposedly. I took the joke and turned it into something positive and unique.
The first pop-ups were in my parent’s front yard. We would promote them on social media and made sure to also comment on any house party post we saw. We quickly built a buzz, and it was basically a domino effect after that. We often entice customers with the scent of our food alone. We take pride in quality and consistency in everything we do, and the people who try our dishes can tell. We consider ourselves Surf and Turf caterers. We can either come to you and cook on-site or deliver everything warm and ready to be served.
We offer Taquizas or Taco Bar service with steak, al pastor, birria, chicken, chorizo, and shrimp. We also offer various seafood options like Shrimp Ceviche and Aguachiles. We are mostly focused on private catering but do have a residency at The Local in the 7th street area every Tuesday from 9 pm to sell out. We offer Tacos, QuesoTacos, Quesadillas, and our most recent addition our Surf and Turf taco! Private catering pricing is per person. Call or DM us for your next event!
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
I wish it was smooth all the time. I’ve had to teach myself how to build formulas, properly manage my time, and keep a positive customer service attitude. Being consistent and overcoming bumps in the road is an everyday task, but we continue to get through it!
Appreciate you sharing that. What else should we know about what you do?
I’ve been in sales for about the same time I’ve been cooking. It’s always been pretty easy for me to start or keep a conversation going. It’s one of the lines of work that I’ve always found joy in.
Is there any advice you’d like to share with our readers who might just be starting out?
Best advice I could give is to have a plan. Be authentic and build your clientele. There’s so much free game online/ YouTube. Sacrifice sometimes if having your own business is really something you wanna do. Have an idea of how far you’d like your business to go. If I could go back in time, my priorities would be Network!
