Today we’d like to introduce you to Rolando Herrera.
Hi Rolando, so excited to have you with us today. What can you tell us about your story?
Howdy, my name is Rolando Herrera and I began my culinary career in 2013. I
started at a restaurant in Klyde Warren Park, then moved on to a French bistro in Bishop arts District. I have had the privilege of working alongside many talented chefs who have guided me to become the Chef I am today. I now work as a private catering chef in Turtle Creek and now co-owner of Three Smiths. The name Herrera translates to blackSmith. An ironworker, one forged in the flame. I come from two generations of Family’s with three sons, Three Smiths.
We all face challenges, but looking back, would you describe it as a relatively smooth road?
Working in the service industry is never a smooth road. Just like any job there’s sacrifice. Some obstacles as a father and a service industry worker is the big decision of what’s more important. Being there for your family or working more to provide for your family? Do I take a second job, or watch my son take his first steps? I’d do anything to go back and be there on that day for my little boy. The balance is hard, but if it wasn’t for some of those times I can’t repeat, then I wouldn’t be here in my position.

Three Smiths is a private catering business offering a variety of menu options personally crafted by yours truly, Rolando Herrera. I work with the party host and create a menu to their ultimate liking. Ranging anywhere from elegant steak dinners to Classic backyard taco parties. I’ve seen and cooked it all. Weddings, open houses, holiday gatherings. Whatever kind of party you’d like, we can cater. We are constantly expanding our menu and operations. Recently adding 12” personal handcrafted pizzas.
Three Smiths is different from the others because we don’t try to be anything other than our genuine selves. Having over 10 years of cooking experience, we take that with the heart and soul of being a Dallas native and provide nothing other than food that has been prepared with the love and passion of a family.
We are very proud of what we represent, the fact that family is forever, and we should always stick by them. Our bond is strong, just like our emblem. The Iron H, forged by our grandfather, with the dream that his family will one-day live life’s greater than his. The name Herrera will be passed on, and so will our passion for what we do.

The role of Luck that has played a huge part in our upcoming, was honestly being raised in Dallas. To grow up in Oak Cliff and make lifelong friends. Dallas is such a tight-knit community, and everyone being so supportive of our success that word of mouth around here is more useful than plastering up a huge billboard. And I find that very lucky. That others around me want to see my success and are advocates for the ThreeSmiths brand.
