Hi Anna, so excited to have you with us today. What can you tell us about your story?
Pastry was always my passion since I was in school, and I always was dreaming to open my own pastry shop where I can craft deserts based on my vision how deserts should looks like and how they should be tasted. I keep working and experimenting over last 20 years, took a lot of classes, trained with top pastry chefs in the world to make it happen. Finally, once we decided where we want to be – It took us 3 years to open our first flagman store in Southlake where we created everything from scratch, starting from design and open kitchen concept and finishing all the processes, sign contracts, remodel existing space and getting ready. And this is only beginning of our journey.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
The most difficult was to find a right spot for the store and kitchen, especially if you are a brand-new business. Many places which are empty are simply not fitting your needs because of existing setup and layout. And even if you find the right spot – If you are not chain it’s hard to get into – if that is a retail plaza there are so many contract limitations exists from well-known chains on exclusivity, so it practically will make impossible to make it happen. It took us 2 years to find a right spot which fits us, agreed all the details with landlord, and close all the formalities with the City.
Another challenge I’d talk is ingredients supply . We are committed to delivering unparalleled taste by using only the world’s best ingredients, free from artificial flavors. Our croissants, for example, feature Isigny Sainte-Mere special dry butter from Normandy, France. Securing this butter, especially during hot Texas summers, poses unique challenges as well.
Also finding local bakers to join my team who share a deep passion for crafting delectable pastries was our next challenge. I’m proud of our young and talented team who spent a lot of time to learn about modern pastry techniques from me and match my dedication and creativity.

We take pride in crafting our Viennoiserie products from scratch in-house, rolled by hand. Our meticulous process includes a long fermentation process to achieve the perfect balance of crunchiness and rich buttery flavor. Everything is baked daily with limited stock to ensure freshness. As we create our line of desserts, we strive to infuse a modern twist into classic French favorites, offering a fresh and innovative take on these time-honored treats. We use only the finest premium ingredients in our products, including Belgian chocolate, Madagascar vanilla beans, French butter, and locally sourced dairy products from Texas.
If we knew you growing up, how would we have described you?
Our beautiful storefront in Southlake is like our business card where modern vision of deserts collaborate with interior design and my vision for ideal sweet place. You can enjoy our desserts with coffee or aromatic fancy tea on-site, take them home, or order a cake for a small family celebration within 24 hours on our website. We also offer a wholesale program for local restaurants, hotels, and coffee shops, along with a catering menu.
