Today we’d like to introduce you to Javier and Chere Montero. They and their team shared their story with us below:
Javier Montero grew up on a family coffee farm. His father always kept the best coffee beans of his harvest for personal use, to have a good cup of carefully selected coffee with his family. When Javier retired from working as a veterinarian, he and his wife decided to move to Texas where Chere was born, share the tradition with his own children and began his search in the U.S. for a quality Costa Rican coffee. His search was only met with disappointment. He tried every bag of Costa Rican coffee he could find, non reminiscent of the coffee he shared with his father. Frustrated, he booked a trip back to Costa Rica, where he partnered with his childhood friend’s 5th-generation farm. This partnership allows them to bring the same quality coffee Javier grew up drinking, back into their home in Texas and share it with coffee lovers around the country.
The origin of the 2 Hats Coffee name was given by the two cultures, the Texan cowboy hat represented by Chere and the Costa Rican farmers hat called “chonete” represented by Javier. The combination of these two hats represents not only Javier and Chere but also the duality of cultures from which 2 Hats Coffee comes.

Our coffee is as smooth as silk! But educating people about specialty coffee is a challenge. Quality coffee requires a thoughtful process that demands a greater effort. All of that starts with the environment of the dirt where the bean grows
As you know, we’re big fans of you and your work. For our readers who might not be as familiar, what can you tell them about what you do?
My veterinarian education/experience with science and agriculture lends a knowledge base to my passion for coffee. We have single origin coffee that shares our values. We roast weekly in small batches to ensure quality.
What were you like growing up?
Javier was quiet, compassionate, and hard-working. He loved animals, farming, and helping his father with the coffee harvest on their farm. He also delivered meat from his father’s butcher shop on his bicycle, taking those prime packages and giving them to families that couldn’t afford to buy meat. Chere was outgoing, kind, and driven. She also shared a love for animals and helping people. Interested in health for her family and others, she decided to study nursing. She would later move on to own a farm with animals. Together, Javier and Chere always support local, buying from neighboring farms.
