

Today we’d like to introduce you to Lanny Lancarte.
Lanny, can you briefly walk us through your story – how you started and how you got to where you are today.
Fourth generation restaurateur and great-grandson of Joe T. Garcia. Grew up in restaurant business, travelled extensively and lived in Mexico being immersed in Interior Mexican cuisine before attending CIA at Hyde Park and landing a job working for Rick Bayless at Topolobampo and Frontera Grill in Chicago.
Opened first restaurant Lanny’s Alta Cocina Mexicana in 2005 receiving regional and national acclaim, cooking at the James Beard House, receiving Star Chefs rising star award in 2007 and featured in numerous publications.
After nearly 10 years in fine dining, switched gears and opened Righteous Foods in 2014 serving health conscious food focusing on from scratch kitchen with the use of responsibly sourced ingredients.
We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
The fine dining world presents certain challenges that are different from the casual dining world but the restaurant industry in general is the biggest challenge.
High competition, high employee turnover, low margins and hours of operation are the norm.
Smooth at times, but running kitchens, keeping current with menu while pushing limits and establishing operations in the FOH and BOH are things that can make it smooth or not.
So let’s switch gears a bit and go into the Righteous Foods story. Tell us more about the business.
We serve breakfast lunch and dinner 7 days a week. We provide a safe eating environment for people with all kinds of dietary restrictions that taste really great and appeals to all people.
We specialize in making people happy with innovative food, friendly service, an inviting atmosphere and consistency in product.
I am most proud that we are independently and locally owned. Economic development in the area is booming bringing in numerous national and regional chains that make it harder to find employees and fight for diners while the money leaves the city and goes out to these corporations outside of our city.
We are involved in our community and I am part of a family that has run restaurants and given back to a community since 1935.
Has luck played a meaningful role in your life and business?
Finding the right team, good luck is a result of a good plan and good execution and of course we have had bad luck with street closures due to construction, weather, etc, but all things out of our control.
