Good morning Rafael, we’re so happy to have you here with us and we’d love to explore your story and how you think about life and legacy and so much more. So let’s start with a question we often ask: What is something outside of work that is bringing you joy lately?
The dream to build my restaurant the best I can and provide great food to people. I love sharing my food and enjoy getting to know the people from my community.
Can you briefly introduce yourself and share what makes you or your brand unique?
My name is Rafael. I was born in Guadalajara, Mexico, and immigrated to the United States when I was 14 years old. As soon as I worked in the kitchen, I knew it was my life. I started when I was 17. I’m in my sixties and still doing it because it is what I love to do. I have 6 children. Four girls and 2 boys. I’m married to my beautiful, wonderful wife, Martha. She is supportive of my dream. I am working to build a legacy with this restaurant.
No one cooks like us. I always ask my guests for feedback. People have stated various times that they have never had food like ours before. Specifically the chile relleno and pollo sazon. Mind you, the chile relleno is a classic Mexican dish made by many. I even had another Mexican restaurant owner ask to see our kitchen because he was so impressed with his meal.
Thanks for sharing that. Would love to go back in time and hear about how your past might have impacted who you are today. Who taught you the most about work?
I worked with a lot of European master chefs. When I knew that cooking was going to be my life, I started looking for master chefs to be trained by. I saw the difference between a dishwasher and a cook. I love that I can be creative. Create, create, create—that’s all I want to do.
Was there ever a time you almost gave up?
Yes, when I was training with the master chef. They were very mean, rude, and disrespectful. They were racist and I was even hit at times. It took a toll on me, and I was scared that I felt my life would always be that way.
Alright, so if you are open to it, let’s explore some philosophical questions that touch on your values and worldview. What’s a cultural value you protect at all costs?
My roots. My Mexican heritage. I am proud to be Mexican and it shows in my food. To share my culture and cooking with others is the greatest joy and I am risking everything to be do so.
Okay, so before we go, let’s tackle one more area. When do you feel most at peace?
When I am at home with my family. I get to spend time with my kids and wife. I spend 12 hours a day at the restaurant every day. So my family is my peace and home.
