Today we’d like to introduce you to Chris Kindred.
Hi Chris, thanks for joining us today. We’d love for you to start by introducing yourself.
I’m the chef and creative mind behind CHOW. After serving in the Army, I graduated from the Iowa Culinary Institute in 2019. I’ve always had a deep love for bold flavors, especially Asian food. It’s something I grew up around and really fell in love with after living in South Korea for a couple of years. Ever since culinary school, I’ve dreamed of opening a food truck.
Then I met my wife, Katie. She’s been gluten-free since 2006 after getting diagnosed with celiac. When we first started dating, she actually kept it to herself at first because she wasn’t sure how I’d react. It was no big deal. Once I found out, I made it my mission to recreate all the foods she missed so she didn’t have to feel limited. Before long, friends and family were blown away that everything I was making was completely gluten-free.
We got married in 2024 and decided it was time to bring my passion to life. That’s how CHOW came to be. We’re a food trailer serving up American-Asian comfort food that just happens to be 100% gluten-free.
For us, it’s about giving people, especially those with dietary restrictions, the kind of experience they rarely get; a full menu where they don’t have to second-guess anything. And honestly, gluten-free food shouldn’t feel like a compromise.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
We’ve been really fortunate so far, but like any new venture, it definitely comes with its challenges. The hardest part has been navigating all the different permits, every city and county seems to have its own rules. My wife and I are doing this full-time, so balancing the day to day grind while keeping our relationship strong has been a learning curve, but we’re figuring it out together.

We’re a Fort Worth based mobile food truck serving up American-Asian fusion dishes. What really sets us apart is that our entire menu is 100% gluten-free. That’s something we’re really proud of. So many people miss out on certain foods because of dietary restrictions, and we love being able to give them an exciting, worry free experience. Our menu features things like sticky chicken rice plates, loaded fries, fried rice, and tacos, all made from scratch and packed with flavor.
Do you any memories from childhood that you can share with us?
I’d say one of my favorite memories is living in Seoul, South Korea. My family and I would often go to Itaewon and try all the different street food vendors. Those experiences really shaped my love for food and flavor.
