Charles , we appreciate you taking the time to share your story with us today. Where does your story begin?
I’m a self taught, yet Certified Chef whose food truck journey has taken me through 3 states before ultimately growing into a brick and mortar location here in Lancaster, Texas. It’s been an incredible path, and I’m proud of how far the journey has brought me.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It hasn’t been a smooth road. Building brand awareness was tough, especially after paying vendor fees, staffing, and expenses for events that didn’t always perform well, Weather challenges also made the Food Truck unpredictable. Even now with the brick and mortar, we’re still working to increase brand awareness, visibility and just simply getting the word out. The journey has had it’s obstacles, but it’s pushed me to keep growing.
As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I am known for my ability to create my own style of cooking by blending together flavors from different cultures while still striving to be innovative yet true to my multicultural approach. In doing so, I provide Deep South Favorites with a New Orleans and Mississippi influence on my menu as well as combining flavors from around the globe.
Ultimately, I have always been inspired by how food can tell a story, convey cultural ideas, and bring people together.
What do you like best about our city? What do you like least?
I appreciate the sense of community in our city and how people value good food coupled with good service and genuine connections making it a great place to build a brand and grow a business. On the other hand, visibility can be a challenge. It takes extra effort to get the word out and make sure people are aware of new businesses and what we offer.
