Hi Ciarra, we’d love for you to start by introducing yourself.
I graduated from Le Cordon Bleu in 2013, but initially followed my previous education into the marketing field. After realizing the corporate world wasn’t for me, I took a leap and opened a retail store. Unfortunately, just one month into COVID, the city shut us down and I was forced to close.
Knowing that people still had to eat, I pivoted to meal prep, which quickly grew into a strong and loyal client base. With overwhelming support from my family, friends, and clients, I found the courage to fully return to my culinary roots and start my food truck, turning challenges into the path that led me back to my passion.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
This path has been anything but easy, and it’s come with countless challenges along the way. From navigating the complexities of permits and regulations to finding reliable suppliers, every step required persistence and patience. On top of that, there were mechanical issues, long days, and the physical and mental demands of running a food truck largely on my own in the beginning. It often took more time and energy than I ever imagined.
Today, I’m grateful to have a small team of amazing employees who help make it all possible. Their support has transformed the business and allowed it to grow beyond what I could have done alone, making every challenge along the way worth it.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
We specialize in American comfort cuisine, focusing on some of my all-time favorite foods, burgers, chicken, hot dogs, and fries. A lot of the inspiration behind our most popular menu items, like the Bacon Lasso Burger, Cluck Norris Sandwich, and most importantly the Grub Dog, came straight from my dad, whose ideas and influence are woven into the heart of what we serve.
What I’m most proud of is the quality of the ingredients we use, especially our burger patties made from a blend of sirloin and brisket chuck. It took many tries and plenty of failed attempts to get the flavor, and quality just right, creating something people wouldn’t normally expect from a food truck.
In only our second year, we became a finalist in the Southlake Readers’ Choice Awards for both our burger and fries, going head-to-head with major competition and long-established franchises. That recognition meant the world to me. Most of all, I’m proud that no matter how hard things got, I never gave up. I truly attribute that perseverance to my family, who have always jumped in to support me whenever I needed it.
How do you define success?
To me, success isn’t defined by quick wins, titles, or numbers—it’s defined by perseverance and purpose. Success is showing up on the hardest days, pushing forward when things feel uncertain, and continuing to believe in what you’re building even when the path is anything but clear. It’s choosing not to give up when challenges stack up, but instead learning, adapting, and growing through every setback.
Success also means creating something that truly resonates with people—something they want to come back for again and again. When customers return, bring friends, talk about their favorite menu item, or make our truck part of their routine, that tells me we’re doing something right. Knowing that the food, the quality, and the experience I’ve poured my heart into keeps people coming back is incredibly fulfilling. That combination of perseverance and connection is how I define real success.
