Community Highlights: Meet Mike Hutchinson of CraftWay Kitchen

Today we’d like to introduce you to Mike Hutchinson.

Hi Mike, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
I started as a Busboy at the Historic Holly Hotel in Michigan on my 16th birthday and knew that’s what I wanted to do for the rest of my life. I later went back to become the Executive Chef. I helped grow the Rockfish, Front Burner and Kenny’s Restaurant Group brands. In 2019 partnered up with Troy and Lisa Cooper to start CraftWay Kitchen. We have opened three stores in Plano, Frisco and most recently Southlake.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
The biggest challenge was Covid happening three months after we opened and the ensuing couple of years with Food, Equipment and Staff shortages.

As you know, we’re big fans of CraftWay Kitchen. For our readers who might not be as familiar what can you tell them about the brand?
We are an elevated American restaurant, everything created from scratch. We are known for creating a comfortable environment with great food and service. “Your Home Away From home” . I believe our service is what sets us apart from other places. I am most proud of the teams we’ve built. It is a genuine group of people that care.

Can you talk to us a bit about the role of luck?
Luck has played a big role. I’m a big believer in being at the right place at the right time. Sometimes you make decisions for one reason and it works out for a completely different reason.
