Community Highlights: Meet Kathy Kim of Lazi Cow

Today we’d like to introduce you to Kathy Kim.

Hi Kathy, we’d love for you to start by introducing yourself.
My love for boba tea started more than 25 years ago in California, long before most people even knew what boba was. What began as a simple treat quickly became something I genuinely connected with—an experience, a comfort, and eventually a passion that followed me everywhere I went.

After leaving California, I moved to Oklahoma to attend the University of Oklahoma, and later, in 2004, I relocated to Texas, where I began my full‑time career. That job ended up shaping my life in ways I never expected. It allowed my family and me to travel the world, experience different cultures, and—of course—try boba in every corner of the globe. Along the way, we explored different business ventures inspired by what we learned during our travels, but one thing never changed: my love for boba.

Years later, I began working closely with the founder of Lazi Cow to figure out how we could bring the brand to Texas in a way that honored its roots while creating something special for our community. After a couple of years of planning and development, we opened our first Texas Lazi Cow location in July 2024. It was a milestone that felt both surreal and deeply rewarding.

From there, things moved quickly. We opened our Colleyville and Denton stores in 2025, and the journey has been a whirlwind ever since. Each store comes with its highs and lows, but the constant—the thing that keeps us grounded—is creating a memorable, joyful experience for every customer who walks through our doors. People come to treat themselves, and we take pride in making sure they feel like they truly deserve that moment.

One of the greatest blessings has been the team we’ve built. Our employees don’t just work with us—they become family. And for us, family is everything. Now, with Lazi Cow, our family has simply grown a little bigger.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It definitely hasn’t been a smooth road, and I don’t think any business owner would say otherwise. There are highs and lows in every industry, but being a business owner in the food and beverage world is a completely different animal. You have to develop thick skin because challenges can come at you from every direction—customer retention, seasonal slowdowns, employee engagement, financial pressures, and everything in between.

The stress doesn’t magically disappear at the end of the day; it follows you, because you care. But with that stress also comes the reward of seeing your hard work and dedication pay off. Watching customers enjoy what you’ve built, seeing employees grow into a family, and knowing you’re creating something meaningful for your community makes every obstacle worth pushing through.

Lazi Cow is a boba and specialty drink shop with a playful personality and a focus on quality. We’re known not only for our drinks but also for our delicious taiyaki waffle desserts—crispy on the outside, chewy on the inside, and always made fresh to order. At our core, we specialize in crafting the perfect drink for every customer. Whether it’s one of our unique Specialty Drinks you won’t find anywhere else or a fully customized creation through our Build Your Own Boba menu, we want every sip to feel personal.

What truly sets us apart is the experience. We’ve created a fun, welcoming environment filled with cute artwork, comfortable seating, and a team of friendly staff who genuinely enjoy connecting with customers. I’m proud that people see Lazi Cow as a place where they can relax, treat themselves, and enjoy something delicious. That sense of comfort and joy is a big part of our brand identity.

We also care about the impact we make. Our reusable glass bottles are one way we help protect the earth while giving customers something beautiful and functional to take home. And as we’ve grown, we’ve expanded our offerings to include catering services for events—bringing our drinks, taiyaki, and signature Lazi Cow energy directly to celebrations and gatherings.

At the end of the day, Lazi Cow is about great drinks, great desserts, and a great experience. We want readers to know that when they visit us, they’re not just getting boba—they’re stepping into a place built with heart, creativity, and a whole lot of flavor.

What matters most to you? Why?
What matters most to me is that every customer genuinely enjoys their drink and their experience with us. That feeling—of treating yourself to something delicious and walking away a little happier—is the same feeling that sparked my love for boba more than 25 years ago. Before I ever dreamed of opening my own shop, I was the person visiting different boba places just to find that perfect cup and that welcoming atmosphere.

Even today, I still treat myself to boba wherever I travel. I try new shops, explore new flavors, and pay attention to the little details, because I’m always learning and always looking for ways to make our own customer experience even better. That curiosity and love for the craft is what drives me.

At the end of the day, if someone walks into Lazi Cow and leaves feeling like they treated themselves—like they deserved that moment—that’s what matters most.
