Today we’d like to introduce you to Chelsea Holzer.

Chelsea, we appreciate you taking the time to share your story with us today. Where does your story begin?
I’ve always felt that my niche is rooted in the arts. I explored just about every creative outlet growing up, and baking was always one of the many areas where I found joy. To me, it naturally falls under that same umbrella of creativity and expression.

I started Butter Days simply because I wanted to make cakes for my family and friends. Gift giving has always been my love language, and creating something beautiful and personal felt like the most natural way to show that. What began as a hobby quickly grew when the people around me encouraged me to turn it into a business. Once I did, it took off in a way I never expected.

From there, I kept going. I continued to refine my craft, develop my style, and take on more clients. Along the way, I realized how much I truly enjoy working for myself and how much more at ease I feel being my own boss. Today, Butter Days is a space where I can combine artistry and intention, creating cakes that feel personal and meaningful for the people celebrating life’s most special moments.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It definitely hasn’t been a completely smooth road. There have been really challenging moments that left me overwhelmed and with a lot to think about, but those are the times I’ve learned and grown the most. I truly believe my business is where it is today because of the hardships I’ve had to work through.

One of the biggest lessons has been learning how to handle feedback. I’ve learned to take critique with a grain of salt, not take it personally, and instead see it as an opportunity to improve. Most of the time, those difficult situations are the only way you realize what needs to be refined in your business.

Some parts of building Butter Days came more naturally to me, especially the creative direction and branding. My background in marketing, fashion, and the arts made it easier to find my design style and carve out a niche. But other areas took more time and patience, like customer service, the technical side of baking and stacking cakes, and all the small details that go into running a business day to day.

Overall, every challenge pushed me to get better, and I’ve grown stronger and more confident because of it.

Can you tell our readers more about what you do and what you think sets you apart from others?
I specialize in custom cakes, with a focus on abstract, artisan, vintage-inspired, and maximalist designs. I’m most known for my more expressive pieces, the over-the-top, floral, highly detailed cakes that really stand out. When people recognize my work, it’s usually for those “crazy” cakes that feel bold, layered, and full of personality.

My process is very intuitive and emotion-driven. I like to take whatever I’m feeling that day and translate it onto the cake, whether that’s through buttercream texture, color, fresh flowers, or different embellishments. I enjoy layering elements and letting each design evolve in a way that feels artistic and unique.

What I’m most proud of is that Butter Days is entirely self-built. I’ve grown it from the ground up and continue to run every aspect of the business myself, from client communication and customer service to collaborating with photographers, planners, and other vendors. It’s something I’ve poured everything into, and it’s been incredibly rewarding to see it grow in such a strong and steady way.

What sets me apart is my background and perspective. I went to fashion school in New York, and I also come from a strong foundation in customer service and the arts, having explored many different creative outlets over the years. I draw a lot of inspiration from growing up in New York and New Jersey, which shaped my style and confidence in expressing myself. I’m not afraid to show who I am through my work.

What’s next?
My plans for the future are to possibly open a country store that includes lots of animals, homemade cakes, jams, and a variety of pastries. It is something I would love to build, but I also know that things change often for me, sometimes day to day. Right now I am happy with how things are going, so I am staying open to whatever comes next and seeing how it all develops over time.
