Today we’d like to introduce you to Tony Daussat.
Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
We’re a husband-and-wife team—Tony and Devin—behind Function Coffee Co, roasting small-batch specialty coffee right here in Northlake, Texas.
We started Function because we were tired of coffee that tasted old, bitter, and burnt. But we also didn’t connect with the pretension that so often comes with specialty coffee. So we set out to create something better—coffee that’s crazy fresh, incredibly smooth, and genuinely enjoyable to drink.
Our beans are ethically sourced, roasted weekly, and crafted for people who want a great cup without the snobbery.
Right now, we’re in the final stages of building our first coffee shop. Every detail of the space has been thoughtfully designed—moving away from the typical modern white-box café and into something warmer, more immersive. Think less coffee shop, more speakeasy interior. Rich, inviting, and full of character.
We’re planning to open our doors in mid-May in our hometown of Northlake, TX.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Tony started roasting in January 2025 while still working his 9-to-5 remote job. On weekends, we began selling coffee at local markets—just bags at first. Some days were great, others… not so much.
Everything changed when we introduced DFW’s first can-on-demand iced cold brew lattes. Where we build the ice drink in a tall, clear can, and seal it live for the guests. That’s when it clicked.
Running a coffee cart comes with its fair share of chaos—blowing power mid-service (multiple times), getting drenched in the rain—but through it all, the lines wrapping around markets told us we were onto something. The support from this community has been nothing short of incredible.
Now, as we round the final stretch of construction on our first café, life decided to throw in one more curveball—Tony dropped a piece of lumber on his toe. No X-ray yet, but it’s probably broken. Perfect timing, considering he’s about to be on his feet all day, every day.
Appreciate you sharing that. What else should we know about what you do?
Tony and his wife, Devin, both come from performing arts backgrounds—Tony in acting and Devin in dance—and spent years working professionally in their respective fields.
Tony later built a career in digital design and branding, primarily in the restaurant and e-commerce space, while Devin became a successful Realtor and Broker in the DFW area.
But coffee has always been part of Tony’s story. During his college years in New York City, he worked as a barista between acting gigs—and that’s where the love affair with coffee and service first began.
Over time, their shared entrepreneurial spirit started to take shape. What began as an idea that kept resurfacing year after year slowly evolved—13 years in the making—from a persistent dream… to a concept, to roasting, to a coffee cart, and now, finally, to a brick-and-mortar space.
Where do you see things going in the next 5-10 years?
Over the next few years, we believe more and more people will crave connection—and a return to the “third place.”
The industry has over-indexed on convenience: instant gratification, mobile ordering, drive-thrus, and highly transactional experiences. And while those things have their place, something has been lost along the way. Don’t get us wrong, convenience is awesome.
But we believe that to truly invest in your community, and in one another, we have to create a space worth gathering in. Somewhere warm. Inviting. Intentional.
That doesn’t mean we won’t offer mobile ordering or efficient service. We will. But those aren’t the point.
We’re obsessing over hospitality and community first and foremost. We happen to sell great specialty-grade coffee.
