Thanks for sharing your story with us Joon. So, let’s start at the beginning and we can move on from there.
I’m a chef in trade turned builder.
I started my career in restaurants when I was 16 years old. I worked my way through dishwashing to being a multi-unit manager within a year or so. In the end, I wound up moving to New York to continue and broaden my knowledge of the hospitality industry at The Culinary Institute of America. Fast forward 7 years I started a local catering business which allowed me to build equity to start my first restaurant. Within 9 months of operations, I sold the business and moved my footprint to where I operate my current restaurant today at Legacy Hall in Plano. Following the success of all three brands, I dove into real estate, and launched my construction & development brand, Madewell Companies which has been operating since early 2018. Today, I manage a variety of brands with a keen eye for detail and an immutable passion.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Owning businesses comes with a host of challenges. Rewarding challenges, but harsh challenges nonetheless. From financing start-ups to building trust-worth and ambitious teams, these are obstacles that I face on a day to day.
FreshFin Poké Co. & Madewell Companies – what should we know? What do you guys do best? What sets you apart from the competition?
FreshFin Poké Co. at Legacy Hall is the fast-casual brand that I operate. It serves chef-driven Poké, which is essentially sushi in a bowl or a burrito. Our journey is to source the highest quality fish from responsible and sustainable fisheries all while keeping a reasonable price point. This also includes our idea of keeping our produce as local as possible and to support our local partners.
Madewell Companies is a vertically integrated real estate firm providing construction, development, and management services for our clients. Our experienced team of professionals has 40+ years of real estate, construction, and brand development experience, which has resulted in a creation of over $300 Million of real estate value in the last 20 years throughout the Dallas-Fort Worth Region.
What moment in your career do you look back most fondly on?
