Today we’d like to introduce you to Brittany Williams.
Brittany, can you briefly walk us through your story – how you started and how you got to where you are today.
My journey started with an easy bake oven and a mom that loved to cook. She was a stay at home mom and cooked all our meals, so naturally, I must have my own oven too, right? I’ve been baking for literally as long as I can remember with a dream of one day being on Food Network. I have always had a passion for Wedding Cakes and I have a very good eye for detail. I also have a huge passion passed down from my mom to bake from scratch. There is just something special about it, a skill and desire that not everyone has.
I was attending college at a private Christian University when I took a semester off to go on a mission trip for six weeks to the Solomon Islands. On my mission trip, I decided to quit college and apply to the best school in the US for pastry arts, knowing I had a slim to none chance of getting in. Well, I got it. I moved to NYC by myself at 20 years old and attended The French Culinary Institute. After graduating, I worked another six months in the city and came back to Fort Worth.
I was working at a local bakery (no longer in business) and within 1.5 years, I was on my way to a Food Network Challenge as an assistant. My DREAM had come true, but it gets better – Not only was my dream coming true, I found out I was competing against my childhood idol! It was… INCREDIBLE.
Fast forward a few years, I began baking from home after losing my job (best thing that ever happened to me) and it took off. My business was booming and I now have my first location! We are in the construction phase now of our very first bakery that we own and don’t rent! We plan to move in December or January with a new menu, new hours, coffee, tea and all kinds of goodies!

Has it been a smooth road?
Absolutely not – in the midst of my caking career, I had a snowboarding accident and broke my arm – ending my career, so I thought. It did put it on hold for a few years but I am back to caking daily now! Love my Cake babies!
General business ownership struggle is FO REAL, Y’all. Like I said, I cake… I don’t QuickBooks, I don’t market, I don’t “business ownership”… but I’m leaning- again from my parents who have had their own business for nearly 4o years now. They are seriously the best people ever.
Seven weeks into business ownership. On my FIRST employees, the FIRST day… the oven exploded at 7 AM… not like… caught a little fire or there was a puff of smoke. No… Boom, Flames, Smoke clouds bigger than me- Scary business. The firetrucks beat her to the bakery that day – they actually passed her in traffic… impressive right. So, that was rather terrible. This was on a Tuesday… I had a wedding cake leaving on FRIDAY. My whole shop was a hot mess express and I was shut down. All my product, all my sprinkles, Buttercream, finished products getting picked up that morning, all my cupcakes… Dead. All had to be thrown away. So, very sad. I luckily have a GREAT group of networking friends that helped pull in ALL forces. We got the bakery completely professionally cleaned, a brand new oven ordered, delivered and hard-wired, all new product, new permits, new inspections, everything new in three days… and I was able to complete the wedding cake on time. Yeah, fun times.

We specialize in Wedding Cakes and Custom Cakes. We do have a walk-in purchase of cupcakes and other sweets ( will have coffee, tea, and more stuff at a new location). Like I said, my passion is Wedding Cakes and I LOVE them. We are known for being a completely from scratch bakery as well as a custom bakery – we can do just about anything. We buy the best ingredients we can and our product is very high quality. We also do a lot of custom sugar cookies and custom cupcakes. Many customers come to us for our Gluten Free items too. They are absolutely amazing. We actually have an employee that has Celiac and she LOVES our stuff. She was a customer before she started working there.
Let’s touch on your thoughts about our city – what do you like the most and least?
I LOVE KELLER. The community is like none other. Old Town Keller specifically is such a great little place. There are many different businesses here and we all work together to better each other. They are so very supportive and love to keep things local – if you need something, you can ALWAYS find help for it!
What I dislike about Keller is that there is no Jamba Juice or Torchys Tacos… but seriously, I love Keller and would recommend it to anyone! It’s a fun place to shop or a fun place to own a business!
