Meet Cheryl Peterson of 20 Shades of Vegan

Today we’d like to introduce you to Cheryl Peterson. Them and their team share their story with us below:

Cheryl Peterson is a native of Houston, Texas who, at a young age, learned the art of cooking from her mother, father, and sister. She began her journey to a healthier lifestyle 5 years ago once she realized that working out simply wasn’t enough. Investing in her physical health, she decided to make a lifestyle change by cooking and eating plant-based cuisine only. She considers it to be the best decision of her life and is now a vegan/plant-based foodie. 

Cheryl, also known on social media as “The40YearOleVegan”, is an enthusiastic and determined self-taught vegan chef, who loves to inspire others around her to adopt lifelong healthy eating habits. She plans to spread the love of a plant-based lifestyle to a broader audience through various outlets including social media, classes, and catering services.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back would you say it’s been easy or smooth in retrospect?
The most recent challenges my business has faced were due to COVID-19, with customers feeling comfortable enough to dine in. In particular acquiring a physical location to expand further cooking services, such as commercial kitchen space, a small-sized brick, and mortar or delivery services. Lastly, hiring staff to assist with expanding once funding is secured. 

Alright, so let’s switch gears a bit and talk business. What should we know?
Cheryl, otherwise known as the The40yearolevegan is a self-taught plant-based chef located in Houston Texas. We offer private chef services and small catering. The goal, however, is to one day open an exclusive plant-based eatery, “20 Shades of Vegan”. 

Why I became a business owner/Chef: I became a business owner/Chef because I wanted to help people learn more about veganism and to also be in control of my time. I like the freedom to set my own schedule and work with people I truly believe I can help. 

My products are all plant-based foods that consist of all minimally processed fruits, vegetables, whole grains, legumes, nuts, seeds, herbs, spices. This excludes all animal products, including red meat, poultry, fish, eggs, and dairy products. 

I am most proud of being a resource along with educating and inspiring others about veganism. For example, consuming a plant-based diet it has been proven to reduce the risk of most chronic diseases, which in turn would potentially lower healthcare costs upwards of 70-80%. A plant-based diet is sustainable (financially, patient-adherence-wise, environmentally, etc.) and has the potential to increase lifespan. It supports the avoidance of food addiction and obesity. Lastly, I am super excited about recently publishing my first hardcopy cookbook independently, called “20 Shades of Vegan, Vol. 1&2 which is available now on Amazon. 

Do you have any advice for those just starting out?
I wish that I would have transitioned to a vegan lifestyle earlier. Mindset is everything, stay positive and patient with yourself when learning about plant-based foods. Vegan junk food exists, and although it’s good, eat these foods in moderation. Planning is essential. Don’t forget to take important supplements such as B-12. Lastly, what are you waiting for? Get in the kitchen and be creative with cooking vegan foods or let me assist you. I am here to help!
