I spent over a decade managing facilities for major foodservice companies. After leaving my previous company, I recognized a need for commercial kitchen and food truck commissary in the DFW area, which has a lack of resources for caterers and food truck operators. With my service experience, I realized there was an opportunity to offer a facility to meet all their needs.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Long, difficult process to create a facility that offers a one-stop-shop for caterers and food truck operators. With the help of the city and neighboring businesses, we were able to get a zoning change. In addition, getting adequate funding, licenses, and permits was roughly about a year-long process. We converted a former auto shop into a state-of-the-art, 2000 square foot commercial kitchen, which is a challenge in itself.
Alright – so let’s talk business. Tell us about Catering Grounds – what should we know?
We are the only full-service commissary in Forth Worth that has a commercial kitchen, on-site food truck parking with electrical hookups, and ice and propane sales. In the few short months, we have been open, we have earned the business of over 60 customers who supply gourmet food to the DFW area. We are a true, affordable, one-stop-shop for food truck operators.

Family support has been vital, however, the customer culture plays one of the most important roles. It is an amazing industry, where our customers not only support each other but support our kitchen and treat us like we’re part of their family.
