Hi Devon, so excited to have you with us today. What can you tell us about your story?
Little Lion came from a pregnancy craving and a deep desire to truly enjoy a gluten-free treat without worrying compromise on flavor, texture and quality of ingredients!
We all face challenges, but looking back would you describe it as a relatively smooth road?
We have grown so quickly, keeping up with demand without wavering on the quality of ingredients has been very important to us! Navigating changes and keeping up with demand has been a blessing to navigate.
As you know, we’re big fans of Little Lion Cookie Company. For our readers who might not be as familiar what can you tell them about the brand?
Little Lion Cookie Co. is a Texas-based gluten-free bakery specializing in handcrafted cookies that are designed to feel just as indulgent, nostalgic, and elevated as traditional baked goods — without compromise. What started as a passion project quickly grew into something much bigger: creating desserts that allow people with gluten sensitivities, celiac disease, or dietary restrictions to feel included again.
We are best known for our gourmet gluten-free cookies, seasonal flavors, and intentional approach to quality. Every cookie is small-batch baked with a strong focus on flavor, texture, and presentation because we believe gluten-free desserts should feel exciting, not like a substitute. From our signature chocolate chip to rotating seasonal flavors like raspberry lemon and s’mores, we aim to create products that people genuinely crave — whether they eat gluten-free or not.
What sets Little Lion apart is the experience behind the product. Our goal has never been to simply make “good gluten-free cookies.” We want every interaction with our brand to feel thoughtful, welcoming, and personal. Whether we are creating custom cookies for weddings, shipping statewide, participating in community events, or partnering locally, we care deeply about making people feel seen and included through food.
Brand-wise, I’m most proud that Little Lion has grown organically through genuine connection and word of mouth. Seeing customers without gluten restrictions choose our cookies simply because they love them — while simultaneously hearing from customers with celiac disease that they finally feel safe enjoying dessert again — has been incredibly meaningful.
At its core, Little Lion Cookie Co. is about more than cookies. It’s about creating something beautiful, intentional, and inclusive that brings people together.
Any big plans?
One of the things I’m most excited about for the future of Little Lion Cookie Co.
is continuing to grow intentionally while staying true to the heart of the brand. Right now, we are focused on expanding our reach through local partnerships, community events, weddings, and shipping so that more people can experience what we create — especially those who often feel overlooked in the dessert space.
We are also continuing to grow our seasonal offerings and retail presence while exploring opportunities to bring Little Lion into larger markets throughout Texas. As a small business, it’s incredibly exciting to see the demand and support continue to grow organically.
Beyond the bakery itself, I’m passionate about helping other cottage bakers and small food businesses navigate entrepreneurship in a sustainable and realistic way. That has led me to begin developing educational resources for other bakers who are trying to turn their passion into a profitable business.
More than anything, I’m looking forward to continuing to build something meaningful — a brand that not only creates incredible gluten-free desserts, but also creates connection, inclusivity, and memorable experiences for people along the way.
