Hidden Gems: Meet Chris Kim of Domodomo Ko

Today we’d like to introduce you to Chris Kim.

Hi Chris, so excited to have you with us today. What can you tell us about your story?
Domodomo was founded in 2015 in New York City by Chef Brian Kim and Jae Park. Known for its signature open-face hand rolls and refined presentation, the brand quickly gained recognition for reimagining the traditional sushi experience through a modern, design-driven approach.

Both Brian and I grew up in Dallas. Brian later moved to New York to pursue culinary school, where he developed his foundation as a chef and ultimately launched Domodomo. As the brand expanded across New York and New Jersey, it built a strong and loyal following.

The expansion to Dallas marks Domodomo’s first location outside of the East Coast—and represents more than growth. It is a return home.

For me, the restaurant industry began with my father, who owned a Japanese restaurant in Denton in the 1990s. After his passing, I stepped away from the industry. Opening Domodomo in Dallas brings that journey full circle—uniting family, roots, and a shared vision.

Built on quality, craftsmanship, and experience-driven dining, Domodomo Dallas reflects both the evolution of the brand and the continuation of a family legacy.

We all face challenges, but looking back would you describe it as a relatively smooth road?
It hasn’t been completely smooth, but overall it’s been a positive journey.

In New York City, introducing Domodomo’s open-face hand rolls took time, as the concept was unfamiliar to many guests.

In Dallas, the challenge has been different. While things have been going well, adjusting to a new market without much data made it difficult at first to fully understand local preferences and customer behavior.

Over time, through feedback and experience, we’ve been able to better align with the market while staying true to our concept.
