Hi Ankita, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Chaitanya’s Delights began as a dream shared between mother and daughter. Growing up, food was always at the center of our family. For my Mom, Renee, cooking was never just about preparing meals- it was how she showed love, brought people together, and built community.
While she spent years helping to manage our family business and caring for our family, I grew up admiring her from the kitchen, learning recipes, helping prepare meals, and watching family, friends and coworkers constantly ask for seconds.
As I got older, I found myself searching for restaurants that could recreate the warmth and flavors of my mom’s cooking but nothing ever quite felt like home.
After years of talking about turning our dream into reality, we both made major moves to Dallas late 2024. I relocated from Washington DC and my mom moved from Houston, Texas, so we could finally build something together.
Together, we launched Chaitanya’s Delights- a Vegetarian and Vegan-friendly Indian fusion concept inspired by the flavors of North Indian heritage and influenced by the bold flavors of Texas. Today we continue to share the food, culture and hospitality that have always been at the heart of our family.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It definitely hasn’t been a smooth road. Like many small businesses, we’ve faced the challenges of turning a dream into reality while balancing family, finances, and the day-to-day, demands of building something from the ground up. One of our biggest challenges was simply taking the leap. This was dream that we talked about years before deciding to fully commit to it. In late 2024, we both made significant life changes and relocated to Dallas to pursue that vision together. Building a business as a mother and daughter team has also required us to learn and grow in new ways. We each bring different strengths, perspectives, and experiences to the table, and we’ve had to learn how to balance creativity, operations, and business strategy, while staying true to our mission and to the relationship with each other. Another challenge has been introducing people to a unique concept that blends traditional North Indian flavors and Indian with Vegetarian and Vegan options inspired by Texas influences. Looking back, every obstacle has reinforced why we started. We weren’t just opening a food business- were bringing a lifelong dream to life together. It takes time to build awareness and earn trust, but seeing customers connect with our food and share their experiences makes every challenge worthwhile.

Is there something surprising that you feel even people who know you might not know about?
People are surprised to learn that everything on our menu is vegetarian or vegan. Even customers who don’t typically seek out plant-based food often tell us that they forget they are eating vegetarian and they tell us they forgot they’re eating vegetarian because of the depth of the flavor and authenticity of the dishes. Our goal has always been to prove that vegetarian food can be bold, satisfying, and memorable! Another surprising piece, is that Renee is a picky eater!
