Exploring Life & Business with Petrina Tate of Gourmet Flavors of Texas Llc

Today we’d like to introduce you to Petrina Tate.

Hi Petrina, please kick things off for us with an introduction to yourself and your story.
The year 2020 Petrina envisioned having a food trailer. The year 2021 we had our food trailer custom made with nothing in it but the plumbing and electrical. Our great friend John Scott blessed us and did our wrap! We made it out of a vacation and went to Willacoohie Georgia to pick up our trailer. Roger Mitchell is from Tampa Florida so we visit his family out there. We came back to Texas and Petrina Tate is a firm believer in the Lord. So it started with The Dallas Mavericks St Patrick’s Day Parade. We were in it for marketing purposes and that’s how we donate our funds to the undergraduates. Then it was the biggest hip hop radio station which was K104 and we had our interview and also served 105.7 Smooth R&B Keith Solis shout us out. We still have our logo sticker on there fridge so they never forget us 😆. We got lined up with The Northside Rockwall but the shut down . They were our biggest event. We went to the Margarita Festival there. Im not gonna lie but we were prepared but didn’t expect it to be that many people. This is our first and only family owned business. Dallas Gold and Silver asked for us in Dallas Texas. We had served them. We went to this bar at Riverbottoms in Fort Worth. They love us out there. I kid you not Fort Worth Police Department came out there to our food trailer. This lady officer Garcia radio in all of FWPD and we were surrounded by officers because of our good gourmet food. I mean no one came out of Riverbottoms or stopped by 🤣. Riverbottoms said they lost some business but they thought how cool it was . We are actually on the Fort Worth Police Page. We got invited to the Sherman Showdown Now event for the 2nd time. It was the food truck competition. Then someone invited us to the Food Truck Fly In Event at the Durant Regional Airport in Oklahoma. So we are headed there on June 27. The director is going all out for us. Just imagine Gourmet Flavors of Texas Llc is headed to Oklahoma. Our first out of state event. The director said if the TV station come out here would you like to be interviewed. I said of course!! So we will see how this factors out. Pretty exciting when produce great products but it’s a lot of work as a Executive Chef and Owner.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Absolutely not! We were on the way from Plano to Fort Worth & our food trailer had a massive blowout. We actually had several. We were on the freeway and it was within 10 minutes and officer had seen us and they protected us from the people on the freeway. Angels for real! Tow truck came out and protected us too. We tipped him .Then that was done then our battery died. The tow truck had seen us and came back. He gave us a jump . We tried to give him money and he refused it. Fort Police Department stayed the whole time with us.
Another lady had illegally opened up her food business and was soliciting in front of our food trailer. People thought her food was ours because she was stealing off of my menu. Her prices went from $10 to $20 like mine. She bought food from us and gave a a 10 review at one point. Then she attacked our Google page and gave a 1 star review while showcasing her menu. Google & Yelp shut her down ! My score went back up. She did this because I blocked her from all social media . She was psycho! They harassed and stalked us when we came back from the Sherman Showdown Now Competition. We came back to open up at this apartment complex and her and another resident came to attack us. Police were called ! I told Roger to keep the video going . Jealousy & Envy will get you no where. That’s how they are! My thing is come up with your own brand and don’t copy off of ours! So I signed a form and Plano Police Department circles around to protect us. It was crazy!! We had shut down for a couple months as a result of that incident.
I sell a LOT of brisket and the prices are outrageous at 6.99 a pound. So, I had to raise prices but people still come out. That’s how great our products are. 😁

We are a family owned business company. We are a food trailer. We make everything from scratch. We are authentic and we specialize in Tex Mex. We have amazing Cajun Fried Catfish and Shrimp with garlic fries and Jalapeno Cilantro Ranch. I make a mean 10 ingredient cream cheese banana pudding and our Texas peach cobbler nachos. We make gourmet burgers like our pepperjelly cream cheese bacon burger. That’s what sets us apart from others. We don’t have any chemicals in our food. It’s woodfired like pecan and hickory. What food truck is asked to go into another state to serve and at an airport. We are very blessed ! I make amazing real fruit strawberry lemonade. Someone asked if there was alcohol in it. 🤣 I was like No! My garlic fries,strawberry lemonade, my fry magic seasoning ,sauces,and brisket nachos, Quesadillas, seafood are what im proud of. Im very gifted and it’s my passion.

Networking and finding a mentor can have such a positive impact on one’s life and career. Any advice?
No, Im part of food truck training which is Bill Moore and Melisa group. I get everything from there and all over social media.
