Today we’d like to introduce you to Audrey Broas.
Hi Audrey, so excited to have you on the platform. So, before we get into questions about your work life, maybe you can bring our readers up to speed on your story and how you got to where you are today.
Baking has always been a love of mine. Growing up it was always my mom and I in the kitchen. As I got older a friend of mine and I came up with this crazy idea to open a bakery together when we got older. I ended up going to college for Hospitality Management and Event Planning and even did a semester abroad in Florence, Italy where I took pastry classes. The following semester, in 2019, I made my very first wedding cake for a friend of my sister’s. After that I baked mainly for family and friends and then a year ago, I had my very first order for a stranger and it was the most surreal moment of my life. From there I have been blessed with the chance to meet so many couples and groups of people with the orders that I have been receiving since. I am so excited to see where 2023 will take me.
Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
It has been an interesting road. Post-graduation I got a job here in Dallas managing a restaurant and coordinating all the events there. The hours of a baker are weird enough on their own, so adding a full-time job of working at a restaurant on top of that has been a challenge. I have always been an early bird and a night owl that loves midday naps, so I weirdly feel like has been the biggest blessing to myself because if I wasn’t I would be in big trouble. In terms of other challenges, I have experienced everything else a typical baker has fallen cakes, royal icing that doesn’t set, etc. But I think it is almost part of the fun; you get to solve mysteries all day long!
Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
I would say my passion and what sets me apart from other is my desire to serve others to the highest level possible, which can be seen in both of my careers.
Working, let alone managing, in a restaurant, my one job is to serve others. Being able to be that person that guests get to talk and connect with to create the best and most memorable experience is something that I will never take for granted! The relationships that I have been able to create with staff and guests are ones that I will never be able to forget! With baking, I get to be part of their story; what could be better than that?
In terms of what I specialize in, with baking I would say is my flavors. I LOVE creating and discovering flavor combinations. I refuse to sell a flavor that I am not head over heels obsessed with, from my specialty flavors like Italian Wedding Cake or Triple Berry Almond Cake to the classics like Chocolate and Vanilla.
In terms of your work and the industry, what are some of the changes you are expecting to see over the next five to ten years?
I think every industry is changing at such a warped speed these days. One day one thing is the hot new thing to try, and a week later there is something new in its place. The level of communication and access to information that we have allows for us to always be thinking of the next big thing.
I think the food industry, much like the health and beauty industry, are becoming so much more intentional with their ingredients and their processes. In the food industry, you are seeing so many new concepts open that are in a way putting the consumers first to make sure that they are consuming safe ingredients. If you are not seeing a nutritional label on everything that you eat you basically are just saying that you trust whomever it is coming from, and with that, people are choosing to not eat places that they do not trust, but who can blame them? It is up to us as the makers of the food to be a reliable source of health while still making the food delicious!
