Today we’d like to introduce you to Red Fajardo. 

Hi Red, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
When I hear the word food, time to eat, where do we go for lunch, my heart just pumps excitement to every part of my body. Being a foodie has been a part of my DNA growing up, a family’s legacy where food is considered a member of our unit. Having a whole album of pictures from all the food I eat, a yearly tradition I collect and save it on my archives, I told myself why not share it to everybody and express my thoughts about the food I eat and the experience I had in a restaurant. In the midst of the pandemic, May of 2020, I created a food account on Instagram and started posting my food including what I think about them. It has been life-changing ever since, not only that I have been exploring more restaurants, but I like learning the history and background of each food I eat and places I go. I met so many positive people as well which is one of the best part of this journey. My goal is to support small, local businesses here in Dallas, the city I love. Having the username @redeatsworld, my goal too is when the world 100% opens back I would want to explore different cuisines in different countries and learn their culture. I love what I do and I’m excited for more food adventures I’ll do in the future. 

We all face challenges, but looking back would you describe it as a relatively smooth road?
In terms of life outside the food world, we all go through rough paths, we were given challenges, obstacles, for us to conquer; it may be mentally and physically draining, but it’s part of us growing and being mature as a person, at the end of the day, the view from the top is the best you would ever have. But being in the food world should I say it’s a smooth road? It has been an amazing journey so far and I would love to be on this highway of happiness forever, but I’m ready for challenges that comes at me along the way. Food really does makes me happy; my dopamine levels is through the roof seeing and smelling food. 

Thanks – so what else should our readers know about your work and what you’re currently focused on?
I am a registered nurse and I love being in this profession and field I’m in. It may be really challenging these days especially now during the pandemic era, but I appreciate people grateful for what we do, and made me more determined to do better in doing my job. I love being a registered nurse and a foodie, it’s been so exciting every single day. 

Let’s talk about our city – what do you love? What do you not love?
Dallas has my heart and I love to see this city growing even more especially in terms of food.
