Today we’d like to introduce you to Karen Sanchez.
Hi Karen, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
Oh man, it really has been quite the journey, and one that has been worth every single moment.
My background is in civil engineering, and I spent seven years building my career in that field. Early on, though, I felt a deep longing for more purpose in my work. I started asking myself, What actually brings me joy? The answer came almost immediately: craft coffee and serving others, NOT engineering. That realization was both clarifying and unsettling. I knew something needed to change.
After about a year of prayerfully exploring that shift, I made the decision to step away from engineering and join a Discipleship Training School with Youth With A Mission in Kona, Hawaii. While there, I served in the campus coffee shop and met incredible people from all over the world. I heard their stories, the sacred moments that sparked their journeys toward purpose, and those conversations marked me deeply. Living in that community for several months, I witnessed how one encounter with the presence of God could truly transform a life. During that season, my passion for coffee and people was awakened in a way that felt undeniable.
Two years later, after returning to engineering, I found myself asking another pivotal question: How do I want to step into my 30s? The answer was bold but clear. I am going to launch a mobile coffee cart. With a lot of help, the pieces began falling into place. I have to pause and express deep gratitude to Jonny from Selah Coffee Cart in Denver, whose mentorship in such a niche industry gave me the confidence to pursue this dream. And to my dear friend Mel Ewing, whose work in brand strategy and web design helped bring Saint Coffee to life. Without her, Saint Coffee would not exist in the way it does today.
As for the name “Saint Coffee,” it was inspired by a quote from Dallas Willard. When asked about the journey to sainthood, he responded, “Just take the next right step.” That has marked my own journey. It has not been about having the entire roadmap figured out. It has been about trusting God with the next step in front of me.
I am overwhelmed with gratitude. The dream started simply: to serve with intention and create spaces for connection. One year later, it has grown into meaningful conversations, celebrations, and sacred moments. I am expectant and excited to continue learning, growing, and saying yes to whatever the next right step may be.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It definitely has not been a smooth road. I started Saint Coffee while still working full time in engineering, often putting in long hours. There was only so much time and energy I could pour into the business during the week, and I sadly had to turn away several inquiries because I simply did not have the PTO to take off.
About seven months in, I began to sense it was time to take another leap. For the second time, I made the decision to step away from my engineering career and fully commit to building Saint Coffee.

Saint Coffee is an events-based mobile coffee cart serving handcrafted, delicious coffee at events all across the DFW area.
