Today we’d like to introduce you to Sonia Khan.

Hi Sonia, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
It started off as a hobby during the pandemic, grew into a small mobile catering company and now into a a brick and mortar, Farina In Grani Pizzeria.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It’s been a journey, from mastering the Neapolitan dough and sourcing ingredients from Italy and to setting up the restaurant. It’s not easy but very rewarding.

At Farina in Grani Pizzeria, our passion for authentic Neapolitan pizza begins with the crust. Our name, “Farina in Grani,” reflects our commitment to quality and tradition, highlighting our use of flour that incorporates the whole grain of the wheat—the germ, bran, and endosperm—to craft a dough that is both flavorful and nutritious. This approach creates our signature golden flecks and delivers a depth of flavor and texture that sets our pizzas apart.

We pride ourselves on using only the finest ingredients. Our dough is prepared daily using time-honored techniques and fermented for the perfect balance of taste and structure. Each pizza is baked to perfection in our Stefano Ferrara oven, achieving the ideal harmony of crisp edges, airy softness, and a delicate char.

Topped with premium ingredients such as dip San Marzano tomato sauce infused with basil and extra virgin olive oil, fresh mozzarella, and carefully selected seasonal toppings, our pizzas honor the culinary heritage of Naples while embracing innovation.
