Today we’d like to introduce you to Fallon & Ashley Jacobs.

Hi Fallon & Ashley, so excited to have you with us today. What can you tell us about your story?
White Squirrel Concepts started as more than just a business—it was a moment of divine confirmation. The day Fallon proposed, we spotted a rare white squirrel. We both took it as a sign that something special was being set in motion. Later, when we were tossing around business name ideas, Fallon looked at a photo I had taken of that squirrel—now framed in our home—and said, “What about White Squirrel?” It just felt right.

At the time, we had already spent years working in luxury hotels, fine dining restaurants, and catering high-end events. But we knew we were called to build something of our own—something rooted in my love for food, faith, and community.

That moment became the spark for White Squirrel Concepts. We always knew we wanted more than just restaurants—we envisioned a full culinary brand. Today, we’re steadily building each piece of that vision. We’re actively pitching for funding to bring our multi-concept restaurant group to life, leading chef education through my nonprofit, She Shefs Inc., consulting for other culinary businesses, and continuing to cater unforgettable, personalized dining experiences.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Not at all. We’re still very much in the building phase, juggling this growing vision while both holding down full-time jobs. There are days that start at 4 a.m. with catering prep—loading vans, setting up tastings, knocking out deliveries—then we head straight into our regular workdays without missing a beat. It’s exhausting, but it’s also deeply fulfilling.

What makes the grind a little easier is that we both genuinely love what we do. I work as a recipe developer for Thermomix, a Germany-based smart kitchen appliance company that allows me to stay creative and push culinary innovation every day. Fallon works as a chef at a luxury retirement community, where he not only gets to cook, but also build relationships and bring comfort through food. So while we’re stretched thin, we’re still doing what we love—and that keeps us going.

We’re not just a catering company—we’re a culinary brand built on intention, creativity, and heart.
We specialize in elevated Southern cuisine with a global twist. From chef-driven catering and private dining to restaurant concept development and culinary consulting, we’re building a multi-concept hospitality group piece by piece. Whether it’s an intimate dinner, a luxury wedding, or a corporate activation, we create unforgettable food experiences that feel custom, intentional, and beautifully executed.

What do we do?
We specialize in elevated Southern cuisine with global influences. Our work spans chef-driven catering, curated private dining experiences, culinary consulting, and restaurant concept development. One of our most meaningful projects is The Heritage Dinner—a signature event that honors Black farmers, food stories, and generational traditions through a multi-course dining experience. It’s storytelling on a plate.

We don’t just cook—we curate. Every event, every dish, every detail is approached with care. We blend soulful, elevated cooking with modern hospitality, offering the polish of fine dining with the warmth of a family kitchen. We’re Black-owned, woman-led, and committed to mentoring future chefs and giving back to our community through our nonprofit, She Shefs Inc.

What do we want readers to know?
We’re not just chasing plates—we’re building legacy. White Squirrel Concepts is a brand for those who value flavor, excellence, and intention. What do you like and dislike about the city?
What do we love most about Dallas?
Dallas has hustle and heart. There’s no shortage of opportunity here—you can dream big and find people who’ll back you if you’re bold enough to show up. The city has an incredible food scene, a strong Black business community, and room for creatives to carve out their own lane. It’s the kind of place where you can build something meaningful from the ground up, and we’ve been grateful to do just that.

What do we love least?
Honestly? The lack of resources and visibility for small, Black-owned culinary businesses especially in the luxury space. It can feel like there’s a ceiling unless you already have access, capital, or certain connections. We’d love to see more support for founders like us who are doing the work, building something powerful, and just need the right push to scale.
