Preserving Italy’s Noble Winemaking Tradition
Born in Angri, near Pompeii and the Amalfi Coast, Aldo Bove holds a degree in Enology and Viticulture and descends from the historic House of Bove in Ravello — a noble lineage once part of the Maritime Republic of Amalfi, with its coat of arms displayed in Ravello’s Duomo.
After moving to the U.S. in 2017, Aldo was inspired to share the depth and diversity of Italian winemaking, recognizing how limited the exposure to Italy’s regional varietals was abroad. Drawing on his family’s legacy and his experience across Maremma Toscana, London, and the Amalfi Coast, Aldo founded Above Wines with a clear mission: to serve as an ambassador for Italy’s terroir and awaken the world to its extraordinary grapes.

Meet the Chef
A Legacy of Culinary Excellence and Italian Heritage
Born in Rome and trained in the art of Neapolitan pizza making, Chef Alfonso Vischi brings over 20 years of international experience in hospitality and gastronomy. His noble lineage, the Vischi family, is recorded in the Official Italian Noble List of the 1800s as noblemen of Mirandola, reflecting a tradition of excellence that spans generations.
Alfonso’s career has taken him from Italy to Spain, England, Canada, and major U.S. cities — including Los Angeles, Chicago, Boston, New York, and Dallas. With a degree in Business Administration, he combines refined culinary artistry with strong leadership and vision.
Now a key part of the Above Wines project, Alfonso channels his expertise and heritage into building a community that celebrates Italy’s authentic flavors and traditions — where every glass of wine tells a story of place, passion, and people.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
It definitely hasn’t been an easy road. The wine market today is flooded with thousands of labels, and even within Italian wine groups, the focus is often on international varieties like Cabernet, Pinot Noir, Sauvignon Blanc, and Chardonnay. While these wines are excellent, they are not the true reflection of Italy’s soul. The real challenge has been giving visibility to Italy’s indigenous grape varieties — the lesser-known, authentic ones that make up the country’s incredible biodiversity of over 700 different grapes.
Many small, family-run wineries that cultivate these traditional varietals struggle to survive in a market dominated by French grapes, which are often planted simply because they sell more easily. Our mission has always been to protect and promote the real Italian heritage — the wines that carry history, tradition, and identity in every sip.
On top of that, building our structure in the U.S. came with its own hurdles. Navigating through Texas liquor laws, federal regulations, and managing significant legal and logistical investments was far from simple. But our passion never wavered. Today, thanks to determination and perseverance, Above Wines has built a solid foundation, with a growing community of over 6,000 people across Texas and California who have discovered our wines through our events and online shop.
Every challenge has made us stronger and more convinced that our mission — to share Italy’s true winemaking heritage — is worth every effort.

I’m Aldo Bove, founder of Above Wines, and my work revolves around bringing the authentic essence of Italian winemaking to the U.S. With a degree in Enology and Viticulture and roots near Pompeii and the Amalfi Coast, I come from a family with noble heritage — the House of Bove in Ravello, part of the historic Maritime Republic of Amalfi.
In 2017, I moved to the U.S. and realized that, while American wine culture is vibrant, it lacks the diversity and depth of Italy’s traditions. This inspired me to create Above Wines, a company that specializes in curating and importing small-batch, family-owned Italian wines, with a focus on indigenous grape varieties and regional heritage. We work closely with winemakers, exchanging analytics and insights to ensure that every wine represents its terroir accurately and meets the highest quality standards.
What sets us apart is our commitment to authenticity and cultural storytelling. We don’t just sell wine; we share Italy’s history, traditions, and biodiversity through curated tastings, cultural events, and educational experiences. We’ve built a community of thousands of wine lovers across Texas and California who trust us to bring them closer to Italy’s true winemaking treasures.
What I’m most proud of is helping small family wineries survive and thrive in a market often dominated by international varieties, and showing people that Italy’s less-known grapes — over 700 in total — are some of the most extraordinary wines in the world. As I often say: “Italy’s grapes are endless treasures, and it’s time the world woke up to them.”
What quality or characteristic do you feel is most important to your success?
The quality I believe has been most important to my success is passion combined with persistence. Bringing authentic Italian wines to the U.S., especially from small family-owned wineries and lesser-known grape varieties, has not been an easy path. It requires dedication, patience, and a deep respect for the traditions behind each bottle.
Equally important is attention to authenticity and detail. From working closely with winemakers to exchange analytics and ensure the highest quality, to curating events that tell the story of each wine, every step reflects a commitment to excellence and integrity. This combination of passion, persistence, and authenticity has allowed us to build trust with both producers and wine enthusiasts, and it continues to drive the growth and impact of Above Wines.
