Today we’d like to introduce you to Ashley Simpson.
Hi Ashley, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstories.
The Greedy Nutritionist is not just a name; it’s a lifestyle. Growing up healthy foods were made to seem expensive, inconvenient, and just not taste good. I grew up greedy, always thinking of the next meal, and that meal was probably loaded with sugar, salt, and butter. No matter what the meal was my sisters and I were told, “Don’t leave a smell.” That meant, we better not leave ANYTHING on our plates. Being a nutritionist doesn’t just make those cravings for food you associate with home not appealing, but it does give me the knowledge to have the foods I love and feel comforted by with a healthy spin on them even without leaving “a smell.” I received a Bachelor’s in Nutrition Science in 2011 and have since thoroughly enjoyed working along with parents and their children. I really enjoy spreading the knowledge I have learned to the families in my community. I now want to spread that knowledge further out and directly to children. In 2020 I took this connection and was inspired to dive deeper through a series of children’s books.
Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
The road has not been smooth. but I also wasn’t expecting to be. Sometimes I worry that others won’t see the vision as I do. I’m learning this process as I go, so there’s always a chance that you make a decision that wasn’t the best for your business. It’s important to make adjustments and grow at any of those bumps in the road.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I am a nutritionist turned author. Two things that set my writings apart from others are the stories are centered around a black family and each story is bilingual in English and Spanish. It’s all about inclusiveness.
Any big plans?
My future plans include lots more books…lots more! I would love to hold children reading/creative thinking classes and children cooking classes. All the good habits we form can be made when we are young and open-minded.
