Today we’d like to introduce you to Sheena Scott
Hi Sheena, so excited to have you with us today. What can you tell us about your story?
I came up with the idea of opening a potato bar in 2010. I was in love with every type of potato there is, and I spoke the vision into existence. My very words were “I’m going to open a potato restaurant”. In 2013, I was unemployed and had recently had my 2nd child. I didn’t have the capital nor the credit; however, I knew somehow, it would work out for me. I was unable to find a space for what I was envisioning, so I put the plan on hold. When I relocated to Dallas in 2020, I put a plan in place and opened what is now known as The POT baked potato bar in October 2021. The original location was at The Frisco Fresh Market. The space was wonderful for the amount of volume The POT was doing; however, the location only allowed operations on the weekends. My vision was a 6 day a week operation providing some of the tastiest spuds known to mankind, while providing employment opportunity. Fast forward to 2024, we relocated to South Dallas where we are able to share our vision with everyone 5 days a week. The POT baked potato bar relocated to the 75215 zipcode which is faced with lack of economic growth and development and high unemployment rates. This area has also been titled as a food desert. Here at “The Pot baked potato bar”, we have taken on the challenge of planting our roots in this area for assist in correcting these issues alongside providing good quality food.
We all face challenges, but looking back would you describe it as a relatively smooth road?
In everything worth having, the road is never smooth. I am a single mother of two boys ages 19 and 10, I worked a full-time job, held my real estate license, operated The Pot and managed my investment properties with only 24 hours in a day. With no prior knowledge or teaching on personal credit and money management; I struggled with funding my dream. I experienced lots of trials and error during my start up process. Locating assistance that would fit my business needs was overwhelming and I couldn’t seem to find proper mentorship. I learned to leverage my personal relationships and my 401k to assist in positioning myself for what would soon be an unforgettable journey to building The POT brand.
What do you like and dislike about the city?
I like the amount of community support the city offers. With Dallas being a large city, it makes it easy to learn and grow from other entrepreneurs. I dislike the long commutes and heavy traffic that I experience daily. And the tolls!! Tolls are the closest thing to the devil. (cringe)
