Amy, we appreciate you taking the time to share your story with us today. Where does your story begin?
It all started with coffee dates on Thursday with my dad. He was a pilot in the Air Force, retired, and flew for American Airlines. He is the “Flying” part of the Flying Squirrel. I have always been higher energy and “all over the place” like a Squirrel so I put these two names together and the “Flying Squirrel Coffee Company” came about. We opened November 21, 2019. The community has been amazing in supporting us and especially through the challenging times of Covid-19. We are here to bring the community together one sip at a time. We were called to be the hands and feet and live out the great commission; so that is what we are going to do our best to do. So, if you are ever in downtown Mansfield, come by and see us. We all face challenges, but looking back would you describe it as a relatively smooth road?
Opening a small business has its challenges itself, but opening a few months before the pandemic had its own added challenges. We pivoted. We built an outdoor espresso bar that people could drive up to and we were added on to mobile apps such as door dash, joe, uber eats, etc. Anything we could do to stay prevalent, we did. Then we decided to invest in a VW bus so we could go to them. If you need a great portable coffee bus experience, give us a call, we would love to be there with our FSCC Kombi!
Thanks for sharing that. So, maybe next you can tell us a bit more about your business?
We are small, family-owned coffee shop located in downtown Mansfield and looking to expand into a second location off of Broad St. in Mansfield. Our second location will have the convenience of a drive-thru, with a cozy inside sit-down option as well. We have begun to roast our own beans and will have the roaster located in our new location and are so excited to roast and build those relationships with our farmers. Come try us out in store, or buy some beans online so you can enjoy the Flying Squirrel anytime and anywhere.
So maybe we end on discussing what matters most to you and why?
Creating true human connections. is what is important to us. Our community is what’s important and taking care of one another. We have a community project called the 1/4 mile where the second Saturday of the month we help by being the hands and feet to help those in needs. We have built fences, storage units, ramps, and even a well in Africa. Being the Light in our community is what we are called and honored to do.
