Daniela, we appreciate you taking the time to share your story with us today. Where does your story begin?
I worked in the dental field as an office manager until the start of COVID, when I was laid off. Being at home with my two kids during such an uncertain and difficult time was incredibly challenging, especially while watching so many families struggle throughout the pandemic.
During that period, my husband and I began talking about creating something of our own—something meaningful that could bring people together. The idea of an ice cream shop came to mind, but we didn’t want it to be just a traditional ice cream shop. We wanted a concept that would celebrate and attract people from all cultures.
That vision led us to create The Ice Cream Bar Paletería—a place where diverse flavors, cultures, and communities could come together and enjoy something special.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It has been a hard journey, but in the most beautiful way. Coming from the dental field into the food industry was a complete 360-degree change. One of the most difficult decisions was starting a business during COVID, when so many businesses were closing. We chose to move forward, and the love and feedback we received from our customers are what kept us going.
Six months after opening the ice cream shop, my dad passed away. That was one of the hardest moments of my live struggling financially while not being in a good mental place made it even more difficult. Now, looking back, I truly believe God was preparing me for everything that is happening today. Seeing all the love and support we receive makes the journey worth it.

I am the CEO of The Ice Cream Bar Paleteria, where creativity and passion come together in every flavor we make. I love developing new recipes and experimenting with unique combinations that bring joy to our customers . We proudly make our ice cream in-house, and seeing the genuine reactions and feedback from our customers is one of the most fulfilling parts of this journey. Those moments remind me why we do what we do and inspire me to keep creating, growing, and sharing happiness one scoop at a time.
Any advice for finding a mentor or networking in general?
One of the best pieces of advice I can give any entrepreneur is to always put your heart into your projects, even when no one else believes in you. Believe in yourself. If God has given you the vision, it’s because He knows you are capable of making it a reality. By putting our hearts into something we love, we have been fortunate to win numerous awards and achievements that make us incredibly proud.
