Today we’d like to introduce you to Olivia Fox.
Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
I started my journey at The Culinary Institute of America, up in Hyde Park New York. It was during my first semester that I got newly diagnosed with Celiacs Disease. I met my now-husband there during my last year, and following school, we moved down here to Plano Tx to be close to his family. Since moving here, I recently had our daughter in November of 2021. Being on maternity leave, my husband encouraged me to pursue my dream and start my own bakery so I could work from home and spend time with our baby. Since starting Olivia’s Small Batch Bakery, I am now cater for Chamberlins Steak and Fish House where I make all the desserts for their catering events as well as birthday cakes for special guests and parties, in addition to my regular orders.
Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
Getting diagnosed with celiac while at culinary school was definitely very hard as I was learning all these new recipes and not being able to taste them. As well as with celiac, you are malnourished and going through a period of healing, so finding new safe foods and new safe practices so I could continue to bake and learn safely was definitely a steep learning curve.
