Today we’d like to introduce you to Holly Griffith.
Hi Holly, please kick things off for us with an introduction to yourself and your story.
Birdy’s was born from a creative surge and a meditative practice of rolling and shaping the dough. I had worked in the service industry in coffee for over 10 years. I loved that world, but started to feel like something was missing or lacking. A side hobby of mine, turned into the thing I shared with the people I loved, then turned into a way to serve the community around me. It happened organically and I never could have planned it.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Yes and no. It has in the way that there has been support and encouragement since day one. Not so easy because starting a business from nothing is incredibly difficult. The logistics, the labor, the investment. It has been a year of very long days, hard nights, and a minimal bank account, but I always leave my events on cloud nine. I know this is what I want to do, and it does feel good.

We make hand rolled bagels in Fort Worth TX. Our mission is to keep it simple, fun, and approachable. To know what you’re eating, and to have minimal waste in the process. We strive for creativity, collaboration, and transparency.
Who else deserves credit in your story?
My mom has been the biggest help in so many ways along the way. The FW community is the only reason our business exists. They said we want it, and they keep showing up. I am constantly overwhelmed by the love and support they give us.
