Inspiring Conversations with Glen McDougal of Salmark BBQ

Today we’d like to introduce you to Glen McDougal. 

Hi Glen, so excited to have you with us today. What can you tell us about your story?
My name is Glen McDougal and I am from Fort Worth Texas. I was born and raised in the Northside/ Diamond Hill area. I knew at the age of 8 I wanted to be a chef. A few of my friends in grade school wanted to become doctors, lawyers, first responders, and other great professions but not me I wanted to be in the kitchen. I started cooking professionally at the age of 16 working at several restaurants around Fort Worth until I graduated high school and started culinary school at Le Cordon Bleu Culinary Arts School Dallas. I studied there for 2 years and received my Associates Degree in Applied Science. After graduating college, I started working for large food service corporations and over the years I worked my way up from a cook to an Executive Chef. In 2016 my wife and I started our catering business and named it Salmark Catering. We catered small events for family and friends offering a variety of options like pecan crusted chicken, fajitas, BBQ, and more. When COVID-19 hit in 2020 all of our caterings stopped. We knew we had to do something to keep our business relevant so we started doing small pop-up plate sales outside both my parents and my in-laws houses. I would cook everything I offered on my catering menu to sale at the plate sale but only my BBQ items would sale. This happened for a couple of months and I told my wife hey I think I’m going to stick to BBQ since everyone seems to like it. So, I started selling BBQ only and it was a success. After about 4 months of only selling BBQ, we decided to change our name from Salmark Catering to Salmark BBQ. We continued selling BBQ in front of our parents’ homes until we finally saved up enough money to buy our own food truck and in September 2021, we opened up for the first time out of our food truck and had great success. The name Salmark comes from my grandparent’s previous business. When I was a kid my grandparents both retired from their jobs and opened their own small upholstery business and named it Salmark upholstery. The first part “Sal” stood for their last name Salgado and “mark” stood for the mark he wanted to leave in their community for providing good quality work at a great price. Unfortunately, we lost both of my grandparents to cancer not to long after they started their business. I told my mother at a very young age I was going to take that name and make it the name of my first restaurant. I’m very proud to carry on the Salmark name and I will continue to grind every day to build a brand that’s well known in our community for doing great things. 

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
We have had a few bumps in the road but we have a great support system that always has our back so it makes it easier. I believe Trials and tribulations will come but it’s how you come out on the other side is what matters. I will always provide the best for possible for my customers and hope they continue to return each and every week. 

Thanks – so what else should our readers know about Salmark BBQ?
Salmark BBQ is a Tex-Mex style BBQ food truck. We offer a variety of items that are all made from scratch. We are well known for our “Bolo Loco sandwich”, our “Mac Attack Platter” and our “Carnita Frita”. The Bolo Loco Sandwich is a thick slice of smoked bolo (bologna), 3 slices of our delicious mesquite smoked brisket and a black pepper sausage link sliced all between 2 toasted buns. Our Mac Attack Platter is your choice of 3 smoked meats and 2 of our homemade sides. 

Next you have all my childhood favorites layer all in one bowl. 

In The Carnita Frita you have fritos, roasted elote, crema topped with smoked carnitas, BBQ sauce, Valentina hot sauce and Cilantro. 

All of the items on our menu are things I have always made for my family and although I have tweaked it a bit to my liking the recipe for my brisket came from my father-in-law Miguel Ramirez who taught me a thing or two about smoking meats. One of my main goals is to make sure that when you come eat at our food truck you feel like family. I want you to take a bite of our food and it make you think of being together with family in the backyard cooking out having a good time. I’m proud of the brand we’re building and can’t wait to see where God takes us from here. 

What matters most to you?
Family matters most to me. I treat every one that walks up to our window like family whether I’ve known them my whole life or just meeting them for the first time I want you to feel at home when come see me.
