Today we’d like to introduce you to Abby Dumont.
Abby, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I have my bachelor’s degree in English but I’ve always been truly happy creating in the kitchen.
I worked at a bakery after college and spent all my time nerding out on the science and the art of baking. In the meantime my passion for healthy food and special diets grew as I had family members (and myself as well) who needed to adjust their diets.
Two years later I had connected with some coffee shops in Grapevine who were also in need of more nourishing, gluten-free pastries and I decided to go for it on my own. The demand and excitement was massive! I found a commercial kitchen and started making pastries for the shops as well as fulfilling custom orders for cupcakes, cakes, and more.
Since then, we’ve grown and hired bakers and currently offer our pastries in 9 coffee shops as well as the Farmer’s Market of Grapevine store on Main Street. (The shops are in Grapevine, Southlake, Keller, Frisco, Fort Worth, Flowermound, and Lewisville.) My husband of 6 years, Jordan, and our 11 month old live in central Dallas (which means we can easily now serve a very large portion of the DFW market)!
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Roads are never smooth for the whole ride! Baking is hard work and for a long time I was doing all of it myself. I’ve been intentional about finding quality bakers since then and they also work long, demanding hours. But it’s truly rewarding putting your hands to something from start to delicious finish. I had to take a big step back when I was pregnant and newly postpartum and it was mentally tough to be away from my business even though my team was amazing and held everything together. Now I’m intentionally working to find a balance between being a stay at home mom and an entrepreneur. I want to be in the details and the recipe creation again!
Please tell us about Pinch of Salt Pastries.
We make gluten-free pastries for all occasions. From a simple cup of coffee to a business meeting or birthday celebration. Food brings people together and that is so incredibly meaningful when you have a dietary restriction that usually alienates you. Along with gluten-free, we also offer other dietary modifications and allergy-friendly treats (vegan, dairy-free, paleo etc.). We bake everything from scratch using high quality ingredients and with lots of love! We also avoid the use of refined sweeteners in many of our pastries so you can have a healthy treat any time.
Oh, and it’s just straight up true that a pinch of salt improves everything sweet. Not only are our pastries special, but they are completely delicious even if you’re serving them to a skeptic.
If you had to go back in time and start over, would you have done anything differently?
I would have given myself more credit! I really didn’t expect to grow a business from the start. I was just doing something that I loved and seeing where it would take me. I have to remind myself often not to let “perfect be the enemy of good.”
