Meet Adam Diebold of Bold BBQ Pit in Wylie

Today we’d like to introduce you to Adam Diebold.

Adam, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I was fascinated with BBQ and the chemistry and physical means of cooking large pieces of meat. My father-in-law introduced me to pork ribs. They tasted great and wanted to make them myself. I went a purchased an offset smoker and gave it a go. I couldn’t reproduce the taste and tender of his pork ribs. I hit the internet, books and talked to countless Pitmaster’s on the process to smoke ribs. Once I mastered those ribs, I started on other meats. Through a lot of trial and errors, I realized I was better than most places we would eat bbq. Everyone started asking to buy my bbq.

My wife and I started catering in 2011 and slowly built up the business. Every year is doubling our sales. We did for eight years. I made a leap of faith and trusted in God and I quit my full-time job of 21 years working in a major hospital in Dallas. We found a little storefront in historic downtown Wylie with a great owner that worked with us and build what we have today as Bold BBQ Pit. We are celebrating our year anniversary on February 12th. It has been a struggle and a great financial burden in our family but we are strong in faith and hard work that we will provide the best bbq in Texas with our traditional BBQ smoker.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
Rough roads include city permits, money, personnel, and taxes. We were not educated on how much money and time it takes to figure out how a BBQ place works. There are no instruction manuals on how to be successful but through learning by making mistakes and learning not to do those mistakes again will make us successful both financially and giving back to the community. We have learned to not let people or situations put us down. We strive to provide the best Customer service, great food, experience we know how to do.

So let’s switch gears a bit and go into the Bold BBQ Pit story. Tell us more about the business.
We provide traditional BBQ with our stick burning pits. We have unique menu items with our bbq that leaves guests coming back for more. We are most proud of being a true family restaurant. I get to work side by side with my wife and three daughters. We are set apart from others with the traditional technique of smoking our quality meats.
