Meet Bea Carroll RDN, LDN, MBA of Honey Bee Nutrition, LLC

Today we’d like to introduce you to Bea Carroll RDN, LDN, MBA.

Hi Bea , so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
I’ve always been drawn to the why behind health, not just what someone is eating, but what they’re carrying, what they’re juggling, and how stress, routine, and life transitions shape their relationship with food. For me, this became personal early on: I watched someone I love struggle with their health in a way that made it clear nutrition isn’t just about information, it’s about support, consistency, and having a plan that actually fits real life. That experience stayed with me, and it’s a big part of what led me to become a Registered Dietitian.

My foundation was built through clinical nutrition and hospital leadership, where I learned how to care for people at every stage of healing while also building systems that support real outcomes. And I saw a consistent gap: so many people don’t struggle because they lack discipline… they struggle because the advice they’re given doesn’t match their lifestyle, mental load, or the kind of support they actually need to sustain change.

That’s what led me to create Honey Bee Nutrition and build the work I do today as Bea Carroll, MBA, RDN, LDN. My approach is evidence-based, but it’s designed to feel doable, focusing on the gut–brain connection, blood sugar balance, and habit-building that supports both the body and the mind. Whether I’m working with clients through telehealth, creating education-based resources, or developing programs that scale support beyond one-on-one sessions, the mission stays the same: help people step out of extremes and into a way of eating that feels steady, empowering, and sustainable.

At the heart of it all is the message I live by: treat your body better than a trend, because the goal isn’t perfection. It’s restoration, consistency, and a healthier relationship with food and self.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
It hasn’t been a completely smooth road, more like a refining process. One of the biggest struggles for me was finding my balance and my niche. I was mentored toward a leadership track with a very structured, “next step” career path, and I’m grateful for that foundation because it taught me systems, standards, and how to lead well.

But along the way, I had to be honest with myself: my heart has always been with the day-to-day people who need guidance, clarity, and real support. The work that truly fills my cup is being close to the mission, translating the science into real life, helping someone feel seen, and watching small, consistent changes add up to real transformation.

Leadership gave me experience and credibility, but it also came with seasons that felt more like maintaining the status quo than making the impact I knew I was capable of. Choosing to lean into the work that felt aligned, even when it wasn’t the “expected” route, was a challenge, but it’s also what made everything click.

Alright, so let’s switch gears a bit and talk business. What should we know?
Honey Bee Nutrition, LLC is my private practice and wellness brand built on one core belief: nutrition should be evidence-based and livable. As Bea Carroll, MBA, RDN, LDN, I provide telehealth nutrition counseling and practical tools that help people step out of extremes and into a steady, sustainable relationship with food. I’m known for making nutrition feel clear and doable, with a focus on the gut–brain connection, blood sugar balance, hormones, and habit-building, because most people aren’t just managing meals, they’re managing stress, cravings, fatigue, and a full life. What sets my work apart is the blend of clinical credibility with real-world application, plus restorative support that strengthens your relationship with food and self, not just your meal plan. Above all, I want readers to know my brand isn’t about quick fixes; it’s about consistency, confidence, and learning to treat your body better than a trend.

What do you like best about our city? What do you like least?
What I love most about Dallas–Fort Worth Dallas–Fort Worth is the range, it’s a city that can give you high energy, deep culture, and real restoration all in the same week. If my best friend came to visit, I’d build an itinerary that shows off that rhythm: brunch at The Henry The Henry or Sixty Vines Sixty Vines, a reset with a sound session at Sound Bath Dallas Sound Bath Dallas or The Movement Loft The Movement Loft, and a polished afternoon at the Dallas Athletic Club Dallas Athletic Club. Nights are where the city really shines, rooftop views and jazz at The Clover Club The Clover Club, something intimate and memorable at Ellie’s Ellie’s, or live music at The Balcony Club The Balcony Club. And for the “feel” of Dallas, you can’t beat wandering Bishop Arts District Bishop Arts District, Deep Ellum Deep Ellum, and Uptown Uptown Dallas, each with its own personality.

What I like least? Honestly, there isn’t much, Dallas has so much to do and it’s easy to build a life you love here. If I had to name something, it’s the tradeoff that comes with a fast-growing metro: traffic and drive times can be real, and the sprawl means you have to be intentional about planning your day. But even that’s manageable when your “in-between” moments can be a walk at Klyde Warren Park Klyde Warren Park or a skyline view from Reunion Tower Reunion Tower…those little pockets of beauty are part of what makes the city feel special.
