

Today we’d like to introduce you to Christopher Jeffers.
Christopher, can you briefly walk us through your story – how you started and how you got to where you are today.
We were trying to find a place where families could bring their kids, and their kids could go outside and play while the parents drink and feel okay about it. At the time we opened, there wasn’t a market for that – a place to have a glass of wine and let the kids run crazy. We thought that fried chicken was a real family oriented thing – it drew people together. Kind of a group meal reminiscent of family dining. Ultimately, we are a family dining concept that is stripped down, with Austin feel and relaxed vibe.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It wasn’t a smooth road. The crowds came, but one of the things about going into a second-generation space is that you kind of have to work with the hand that you were dealt and we kind of had to re-engineer it. There really is no easy way to serve 1100 people on a Saturday out of a small kitchen. Our Menu has been changed many times, as we work with our guests to give them what they want. A lot of people helped out with Chicken Scratch, it all wasn’t just one person and each person has left their mark.
One of the cool things about the space is that it has the energy of several people who has walked through the doors and made their mark.
Alright – so let’s talk business. Tell us about Chicken Scratch – what should we know?
What we are most proud of as a company is that we really hustled. None of us have come from a rich background, so we’ve hustled for everything. We have piecemealed six restaurants and managed to create jobs for lots of people. People who have met and gotten married, bought a home and had kids. And it is really cool, and sometimes overwhelming. I mean, there might be people who have never met if we didn’t have our restaurants. It’s the roots of a tree that gets lost and people don’t think about that. When people complain on Yelp, they don’t think about that. All the things we do and the people who we’ve helped.
Is there a characteristic or quality that you feel is essential to success?
The fact that we are willing to constantly change, evolve and keep up with the customer’s needs and desires. We are willing to listen and make things better. We are willing to change things around if need be.
