Meet Emily Fiala

Today we’d like to introduce you to Emily Fiala.

Emily, can you briefly walk us through your story – how you started and how you got to where you are today.
I knew from a very early age that I wanted to be a chef. There was never any other career choice that I can ever remember from my childhood. I have such vivid memories of watching PBS cooking shows every weekend with my father. My original intent was to be a pastry chef, however, as I grew into an adult and became really involved in my health; that path changed.

I was really into fitness, and as time passed I understood my body more and began to focus more on foods that nourish and heal our bodies. Over the past three years, my career has really narrowed down to clients with ailments (Lymes disease, cancer, food allergies/intolerances, dialysis, diabetes..etc) and specialty diets. I spend a lot of time getting to know my clients; their health needs and what is needed to help them find success not only short term but long term as well. Wellness is definitely not a race, but a journey with constant change. You have to be flexible, and prepared to change the path.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Clean eating in the food industry is definitely a struggle. While culture leads us to believe that we all are eating healthy, the reality is that very few truly buy into the theory that every bite counts. For some, there is nothing more true, for others, restrictions are not needed. But our bodies still need healthy foods to flourish.

As a personal wellness chef, my business is now strictly built around those who are health conscious. While I’m certainly not opposed to entertaining and eating foods that are not great for us, my path has just led me to wellness.

We’d love to hear more about your work.
I am wellness chef, I work with ailments, food allergies/intolerances and specialty diets. I am very proud of the work that I do, I have helped cancer patients, dialysis patients, Lymes disease and others just wanting to knock out processed foods and find more focus.

It is truly a privilege to cook for others, it is my passion and calling. I too suffer from many food intolerance and allergies and can relate personally to my clients. I have a certain understanding of the struggles and failures eating can bring you.

Do you look back particularly fondly on any memories from childhood?
My father teaching me how to cook, watching cooking shows with him from childhood to his death ten years ago. No matter the struggles of our relationship, cooking was always a common denominator.
