Today we’d like to introduce you to Francisco Vargas.
Francisco, can you briefly walk us through your story – how you started and how you got to where you are today.
Born in California but raised in Mexico, son of migrant field workers gave me the opportunity to experience the Mexican culture and gastronomy away from home. These childhood experiences planted a seed in my heart of one day being able to share those experiences and the wide range of spices and flavors our culture has to offer to those who can appreciate traditional Mexican food.
Nearly 20 years later, I am here living proof that this is the land of opportunity. It has been a long journey full of sacrifices, tears and long sleepless nights but with much satisfaction, GUANATACO has given me the ability to make my dream a reality.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
The road to having a successful business has not been easy, especially in the beginning. With little to no support from a business perspective, daily business decisions were very stressful and hard to make. Having no past experience of owning a business was difficult to prove to business vendors that my project was a viable venture.
As for my personal life missing important family events such as family gatherings, baptisms, birthdays, and my children’s milestones has been the biggest sacrifice. The daily struggle of balancing family and business has been the most enduring.
Please tell us about Guanataco.
Guanataco is a “Traditional Mexican Street Food” establishment. We ensure that Guanataco prepares and offers authentic home flavor dishes. We strive to prepare these home Mexican dishes using only the freshest ingredients and not deviating from traditional preparation methods and technics.
Serving customers with authentic Mexican street dishes is what Guanataco is known for. We specialize in proving our customers with only the freshest ingredients to prepare our may dish such as Street Tacos, Gorditas, Sopes, Alambres, Burritos, Quesadillas, etc. We also pride ourselves on a wide range of traditional, spicy, fresh and original salsas.
Guanataco has managed to become a household name for Mexican street food. In spite of the many available choices of Mexican food, Guanataco has established itself as the “Go to Taqueria” for authentic delicious Mexican dishes in our community.
Do you look back particularly fondly on any memories from childhood?
My most memorable moments of my childhood was watching my mother and her siblings in a tiny kitchen preparing some of my favorite dishes. Such gathering did not need a special occasion or celebration to have multiple families come together and prepare these dishes, it was simply another evening together. Growing up, it was a normal routine to have several families come together to prepare such dishes, but everyone from the youngest to the oldest participated in the preparation of the food. Aunts, Uncles, cousins all gathered together in a small homemade it all the better, never a dull moment.
