Today we’d like to introduce you to James and Amy St. Peter.
Thanks for sharing your story with us James and Amy. So, let’s start at the beginning and we can move on from there.
Started by selling donuts out of the back of our car. We would put on FB that we are taking orders and would meet at X location with the goods. People would show up, hand us money and then we would hand them a box of donuts. As one person said, “it is the Miami Vice of the donut world”. From there we rented a pizza shop and started selling donuts on the weekend. After doing that for a year-and-a-half we opened our store front on Garland road. A year later we opened our second location in Denton. In 2016, we opened Hypnotic Emporium- ice cream parlor. We will open our second Hypnotic Emporium in Mansfield in 2018. With our shops we meet a lot of great people. One of our customers turned into a business partner and we started East Dallas Diesel together in 2015.
Has it been a smooth road?
For the most part yes. When you first start it is hard because you do not know how to set pars for anything. You have an idea but you just never really know. Getting through 2 years is key because then the numbers should give you a reasonable base line.
So, as you know, we’re impressed with Hypnotic Donuts & Biscuits – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
We are the first craft donut shop in DFW. No one can ever claim that. We make specialty and typical donuts as well as chicken biscuits. I love that our manger is a culinary graduate and is a genius with ideas. I mean she takes Brussel sprouts and can incorporate them into a donut. Plus we are probably the only donut shop in Dallas that makes our donuts throughout the day. We always have people in our kitchen. Look around at most donut shops and you will see all of their donuts sitting on a rack. Those donuts are sold they are gone because no one is there to make new ones. On our chicken biscuits we marinate our chicken 24 hours and then cook it to order. We make our biscuits a little more doughy because our original recipe was flaky biscuits but people would complain because they were too flaky and will fall apart when trying to eat.
Let’s touch on your thoughts about our city – what do you like the most and least?
Love how East Dallas is a city amongst itself. Having White Rock Lake right out of our backdoor is great. Dislike- The lack of pedestrian and bike friendly streets drive me crazy. Also, the big chains that see our little neighborhood starting to thrive and they come in and make it all corporate.
