

Today we’d like to introduce you to Janie Burkett.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
In late 2016, my husband, Jake, and I welcomed twin girls, Brycee Jo, and Blake into our family. With all the planning in our life as new parents, the joy quickly turned to sorrow with the unexpected passing of Brycee Jo due to a severe infection. Needless to say, our world came crashing down. Throughout the following weeks, family and friends gathered around to help us navigate our grief. As is often the case, food played a pivotal role in our journey towards healing. Though simple comfort foods were a staple, one item kept recurring on the menu: Biscuits. On New Year’s Eve of 2016, side-by-side with my brother, Jacob Allen, an entire spread was created around the idea of custom-made, do-it-yourself biscuit sandwiches. We whipped up a “biscuit bar” in the kitchen, featuring fluffy, scratch-made biscuits with mouth-watering toppings like scrambled eggs, bacon, fried chicken, sausage gravy, and maple syrup. The success of this singular meal gave birth to a great new passion for our family. Over the past two years, Jake and I have seen our passion take flight from a creative concept to brick-and-mortar construction. We have lovingly developed every recipe on the menu in our home kitchen and find great joy in sharing some family love with all who pass through the doors of The Biscuit Bar. Our first location opened in Spring 2018 at The Boardwalk @ Granite Park in Plano, with plans to open our second location on SMU’s campus this spring. In addition to opening the restaurant, we welcomed a beautiful baby boy, Banner, into our family in June of 2018.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
As mentioned before, it has not been a smooth road. Losing a child is a traumatic experience, and we grieved deeply for Brycee Jo. However, Jake and I never could have imagined something like The Biscuit Bar coming out of this tragedy. We are so thankful for the support we have received from friends and family, and we have had loads of fun being creative with this concept. The Biscuit Bar has caused us to slow down and given us the opportunity to hear people’s stories over delicious made-from-scratch biscuits.
The Biscuit Bar – what should we know? What do you guys do best? What sets you apart from the competition?
The Biscuit Bar is a unique fast-casual dining experience serving up southern charm on a biscuit. We specialize in fresh biscuits made from only six ingredients, gourmet tots, and refreshing taps. Open for breakfast, lunch, and dinner, we are proud to incorporate homestyle, southern comfort food into any (or every) meal. We’d like to think the thing that sets us apart from other fun, fast-casual concepts is the layout that is designed for hearing others stories. Biscuits helped our family through deep personal loss and grief, and now we get to extend our dining room table.
What is “success” or “successful” for you?
I look at every obstacle as an opportunity and see the potential in every problem. We often say “you can determine the size of the paycheck by the size of the problem that you can solve.” We encounter many problems on a daily basis, and the more we grow the business, the bigger the obstacles seem to be! Instead of getting discouraged, we look at each of these as opportunities to grow and prepare us for being leaders worthy of growing to the next level. When you have this philosophy towards business (and even life!) there is literally nothing that can’t be accomplished.
