Meet Jim Carroll of Meat and Greet BBQ Catering in Arlington

Today we’d like to introduce you to Jim Carroll.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
I began 30 years ago in West Texas perfecting Texas Style BBQ serving family and friends. I began Meat and Greet Catering in 2012 to fill a missing segment in the BBQ market, quality food set up and delivered to remote events. I do not have a box store, I have access to a kitchen and cook all meats in real pits on my property. I am fully licensed by the City of Arlington. We provide the sit-down BBQ experience in a mobile business model. We cater receptions, parties, corporate meeting, or tail gate parties. We design the meals based on your request after looking at our menu. I have 5 employees. We accommodate 20 to 200 or more persons.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
From the start, the food product has been tried and tested and up to the quality people expect. Marketing was by far the hardest part of the business. Without branding our challenges were to design a website, learn about listings, ratings, licenses insurance, and all requirements to run a legit small business. For that reason, I floated the business for the first 3 years. A kind of catch 22 with few reviews from customers served, there was little credibility. We hustled for years and got the experience and customer base we needed to get reviews and become noticed and highly rated on line.

Please tell us about Meat and Greet BBQ Catering.
I am mobile BBQ caterer, I bring the sit-down box store experience to your event. I focus only on real Texas style pit smoked BBQ. All food is fully cooked on pits, no ovens here. I have won awards as Arlington Caterer of the Year, placed runner up in Best Brisket at Ft Worth Annual Breast Cancer Booby Cue cook off event. What set us apart is outstanding food product combined with 5-star catering and customer service. My reviews say it all.

Do you look back particularly fondly on any memories from childhood?
Working with livestock on working ranch.

  • The more plates ordered the less the costs range from $12.00- $14.00 sides and non-alcoholic drinks included
