Meet John Coleman of Savor Gastropub

Today we’d like to introduce you to John Coleman.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Growing up in Massachusetts, I was fortunate enough to have the opportunity live internationally with exchange student host families. From a very early age, food became a means of cultural and social expression. In high school, I took a job cooking at Hill Top Steakhouse, which, at the time, was the highest volume restaurant in America. When it came time for college, I had a passion for hospitality and culinary and attended Culinary Institute in New Hampshire and followed up with a hospitality degree from the University of New Hampshire.

Since then I’ve never looked back. After a 23-year career with The Ritz-Carlton, LLC on the property level at Boston, San Francisco, Phoenix, Amelia Island, Washington DC and Dallas as Executive Chef and on taskforce for openings around the world. Working with James Beard award-winning Chefs like Gary Danko, Fabio Trabocci, Dean Fearing and others, I developed my own approach to cuisine. In 2012, the opportunity to open a new concept independently at Klyde Warren Park presented itself. The Gastropub concept was the perfect fit for this new innovative park. The food is approachable, not stuffy; fresh and familiar, not too frou-frou; social, not strictly special occasion.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
There were challenges to solve at every turn. We built a restaurant over a highway which is a feat of engineering. The restaurant is all glass from floor to suspended ceiling. The kitchen is super cozy. With the help of investors and Klyde Warren Park, we have been able to overcome adversity and do something extraordinary that is a source of pride and joy for us all and our guests.

Alright – so let’s talk business. Tell us about Savor Gastropub – what should we know?
F2M Hospitality began in 2014 with the opening of Savor Gastropub and Relish. Since then we have developed two more brands: Farm to Market Catering and Pink Apron.

Savor, Klyde Warren Park’s main restaurant is a modern gastropub located in the 5.2-acre deck park. We aim to serve simply prepared, fresh food sourced from top purveyors, offering diners a vibrant combination of flavors. The restaurant provides a chef-driven menu with shared plates in order to combine beloved pub fare with a modern twist. A firm believer that food is social, we aim to provide excellent food that draws people together to enjoy an overall amazing experience in the beloved downtown green space.

Relish, Savor’s companion kiosk and one of Klyde Warren Park’s favorite food truck, has now become a permanent fixture located on Southwest Porch. A walk-up window offers a quick fare including gourmet burgers, each infused with our-signature relish and accompanied by fries or frozen custard.

Farm to Market Catering provides friendly, professional, and personalized services – allowing our clients to define their individual experience. Years of experience in the service industry has given us the keen ability to exceed expectations as we strive for excellence.

Pink Apron is a pastry patissier which is lead by Chef Julie Vorce. Each dessert is hand-crafted, with all our batters, fillings, and icings, made from scratch and prepared with fresh high-quality ingredients. Flavors can be mixed and matched, and we help design the best shape, color palette, and size for your creation. Your custom piece is finished with personalized embellishments and carefully delivered to your gathering or event.
