Today we’d like to introduce you to Jose Fernandez. Them and their team share their story with us below:
Sotol Cara Blanca began just a year ago as a project by Marcela and José, two young people passionate about sotol who seek to enhance the culture of northern Mexico and its ancient traditions. José, a countryman descended from families dedicated to cattle ranching, who became familiar with sotol from a very young age, as he saw how all the cowboys drank it after long hours of work.
Marcela a Master in food science and a professional sommelier who has worked for more than 15 years in Sotol.
Both came to the conclusion that sotol should use only the best plants for its production in order to be a soft drink of the best quality; with this in mind they started production on a small ranch 100 miles from the city of Chihuahua, the drink was successful among friends and that is how it began its growth, today there is a boutique factory that produces no more than 10,000 bottles a year and the drink is sold in the cities of Dallas and El Paso .
Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
The road is always difficult for entrepreneurs and in Mexico it is much more complicated; along the way there have been many difficulties, however, the most important of them is running into a market that does not know sotol and thinks that sotol It is a type of mezcal or tequila. Sotol is very different from them because the plant used is completely different; the plant used for sotol distillation is known as sereque or sotol while the one used for tequilas or mezcal is agave.
The sereque requires 25 years of maturation to be used for the distillate and the technology for planting it does not yet exist, so it is a wild plant.
By having a much longer maturation, the drink hides flavors and smells that differentiate it from any other distillate.

100% Chihuahuan company that produces and markets Sotol, located in the city of Chihuahua, began operations in September 2021. Currently, one label is managed, Sotol Blanco Ultra-Premium.

Sotol Cara Blanca has grown thanks to the support of the people of Chihuahua; it is very important to thank the people of northern Mexico, both those who started with this ancestral distillate and those who continue to consume it and seek to show the world the greatness of the sotol.
