Meet Justin James of The Bucking Pig bbq in Hurst

Today we’d like to introduce you to Justin James.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Cooking for me started with my stepdad. He and my mom got married when I was about five. I don’t ever remember him cooking inside, it was all on a grill or a smoker. From the time my mom and him started dating, he was always teaching me things. I learned how to shoot, use power tools, how to cook over fire and I’m fairly certain I got my first sip of beer from him. Anytime he was cooking, I was right by his side trying to soak in whatever he told me. I definitely developed my love for cooking because of him. To me, grilling and smoking always meant good times. Fast forward about 15 years after their divorce when I was in the Navy.

When I got to Texas, there was always something going on at a friend’s house or mine. I would grill or smoke something at least once a month at my place and have a bunch of Navy buddies over. I found my love for cooking again. I never thought it would be something I would want to do full time though. I met my business partner and one of my best friends, Ryan Pedersen back in 2014 or 2015 through a mutual friend. People tend to talk about stuff they love so of course, we got on the subject of cooking. We started out thinking we could just make some BBQ sauce and some dry rubs for a side business. A friend asked us to do an event one day for his shop so we actually borrowed a smoker to get it done. After a few events, we realized how much we were really enjoying it so we bought our first big smoker and started The Bucking Pig BBQ.

Has it been a smooth road?
There has been a couple of speed bumps but nothing really major. Luckily we get along great unless Ryan is making way too much noise in the morning. We have a lot of amazing friends and family that have supported us along the way so we are definitely blessed.

So, as you know, we’re impressed with The Bucking Pig bbq – tell our readers more, for example, what you’re most proud of and what sets you apart from others.
The company is The Bucking Pig BBQ. We specialize in anything smoked. In Texas brisket is king, absolutely no denying that. Me being from North Carolina, I am able to bring a different style of BBQ to the table than other places around us. Everything we do is made in house. I think it’s really disappointing to go to a BBQ joint and see brand of sauce you can pick up off the shelf at any grocery store. We also only use prime cuts. It only makes sense to start with the best and freshest ingredients if you want to end up with the best final product.

Let’s touch on your thoughts about our city – what do you like the most and least?
Like- There’s always something to do or somewhere new to eat. Going to watch live music is one of my biggest joys in life, it is hard to find a day that you can’t find someone good playing somewhere. Dislike- Traffic.
